Qdoba Chicken Recipe

Chicken is such a healthy and versatile item that you can experiment a lot through it. I love preparing new chicken dishes as my family loves them so much. This month, I promised myself to prepare a qdoba chicken recipe as my new cooking experiment. Surprisingly, at my first attempt, I was able to make them and the taste was awesome. If you are a chicken meat freak like me, try the following recipes. I bet you won’t regret it. 

Qdoba grilled chicken recipe: 

I am going to prepare this qdoba special grill chicken recipe using the skinless and boneless chicken breasts and special spices. The special things I am using are tongs, grilling pan, an instant-read meat thermometer, and a zip lock bag. So, when you are going to cook this grilled chicken, make sure you have the proper equipment.

Ingredients: 

Boneless and skinless chicken breasts about 2 lbs.

Chili powder about 1 tbsp.

Garlic clove about 3 pieces

Onion about 1 piece

Olive oil about 2 tbsp.

Cumin about 1 tsp.

Adobo sauce about 2 tbsp.

Oregano about 1/2 tsp. You can use Italian seasoning instead.

Kosher salt 1 tsp.

Black pepper about 1/2 tsp

How to Make Qdoba Chicken Step by Step:

Step 1: Take the chicken breasts and wrap them with plastic.

Step 2: With a rolling pin, flatten the chicken breasts so that they can be marinated smoothly.

Step 3: In a blender or food processor, add chopped onions, minced garlic cloves, oregano, adobo sauce, and olive oil. Blend all ingredients and make like a liquid paste.

Step 4: Take a ziplock bag and place the chicken breasts into it. Pour the liquid paste and mix the paste with chicken breasts for marinating. You can use a glass bowl also. In that case, cover the glass bowl with plastic or lid. I have used a zip lock bag so that there’s no air left.

Step 5: Keep your bowl or ziplock bag into a freezer. Let the chicken breasts marinate for at least 30 minutes. You can keep it like that for up to 2 days if you are not in a hurry. The longer they sit, the juicier and softer the chicken breasts taste. 

Step 6: Bring out a large grilling pan and add 1 tbsp. of olive oil into the pan over medium-high heat (400 degrees F).

Step 7: Place the marinated chicken breasts gently into the grilling pan. Cook the chicken fully turning into different sides using tongs.It takes almost 25 minutes or more to cook completely, depending on the size and thickness of chicken.

Step 8: When the chicken is fully cooked, transfer them into a cutting board. 

Step 9: After 10-15 minutes, when the chicken breasts are cool enough to handle, slice them up for serving.

This copycat qdoba chicken can be served with white rice, salad, sandwiches, etc.

Qdoba Chicken Marinade Recipe: 

The chicken marinade dish is one of my favorite chicken dishes. There are plenty of recipes of the chicken marinade on the internet, but Qdoba style chicken marinade is so far the best. The unique part of this recipe is adobo sauce. This sauce adds the Mexican flavor fantastically. However, you need to gather the ingredients and follow the steps to prepare this recipe. 

Ingredients: 

Boneless, skinless chicken breasts about 4.

Vegetable oil about 1/3 cup.

Red wine vinegar about 2 tbsp.

Dijon mustard about 2 tbsp.

Adobo sauce about 3 tbsp.

Lemon juice about 1 tbsp.

Soy sauce about 1 tbsp.

Black pepper about 1 tsp

Italian seasoning about 2 tsp

Brown sugar about 1 tbsp

Directions: 

Step 1: Pour red wine vinegar into a large bowl. Add 2 tablespoons of Dijon mustard, 3 tablespoons of adobo sauce, 1 tbsp. of soy sauce, 1 tbsp. of lemon juice, 2 tsp of Italian seasoning, 1 tbsp. of brown sugar, and 1 tsp of black pepper into the red wine vinegar.

Step 2: Mix all the ingredients well then, add 4 chicken breasts into the mixture. 

Step 3: Cover the bowl with a plastic and place the bowl into a fridge.

Step 4: Let the chicken marinate for 2 hours. 

Step 5: Bring out a large skillet and heat 1/3 cup of vegetable oil.

Step 6: Cook the chicken breasts for 5-6 minutes per side. 

Step 7: Insert an instant-read meat thermometer into the chicken breasts to check the internal temperature. 

Step 8: When the temperature reaches 165 degrees F, remove the skillet from heat. 

Let your qudoba chicken marinade cool before slicing. Preparing chicken marinade is not so tough. This adobo special chicken marinade is so tasty that you will prepare this again and again.
