Conchitas recipe is not only popular in Mexico but also world-wide nowadays. Because of its appetizing flavors and tasty blast, everyone likes it very much. 

In my family, my 8-years-old daughter loves it so much that almost every weekend she demands this soup. However, I was busy for a while. Thus, I couldn’t share this recipe with you guys. Finally, I’m doing it. 

How to Make Conchas Soup Recipe?

Conchas soup is basically shell soup with shell pasta and tomato sauce. But this is so basic. To add flavors, chefs are experimenting with different types of seasonings, toppings, etc. Today we are here with a very popular Mexican mexican conchas soup recipe, very comforting and surely will soothe your hunger in every sip. Let’s go for the recipe! 

Concha Soup Ingredients:

225 G of Dry Small Shell Pasta 

2 Tbsp of Cooking Oil (Vegetable Oil, Evoo, Etc.)

8 Cups of Vegetable Broth

400 G of Canned Tomato, Finely Diced 

3 Tbsp of Onion, Dehydrated and Finely Minced 

680 G of Garlic Pasta Sauce (See the Recipe below)

2 Tsp of Salt or as per Taste 

1 Tsp of Freshly Ground Black Pepper or as per Taste

2 Tbsp of Vegan Mayo 

1 Tbsp of Fresh Cilantro, Finely Chopped

1 Tbsp of White Onion, Finely Chopped

Methods of Preparing Conchas Soup Step by Step: 

Step 1: Bring out a large stockpot. Adding 2 tbsp of extra virgin olive oil, put the stockpot over medium heat. 

Step 2: When the oil is hot, add shell pasta. Continue stirring until the pasta becomes lighter in color and toasty as well. It will take about 5 minutes to 7 minutes. 

Step 3: Now, you have to add 3 tbsp of dehydrated onion, 680 g of garlic pasta sauce and 400 g of canned tomatoes. Mix them with a spatula. 

Step 4: Cover the stockpot with a lid and let boil for 15 minutes.  After 15 minutes, you will notice the pasta has become tender.

Step 5: Sprinkle 2 tsp of salt and 1 tsp of black pepper. You can add them as per your taste. 

Step 6: Cook for 2 minutes to 3 minutes and take off from heat.

Step 7: Add 2 tbsp of vegan mayo, 1 tbsp of cilantro, and 1 tbsp of white onion. 

Step 8: Continue stirring until the soup becomes very creamy. 

Serve hot and enjoy! You can also sprinkle some fresh cilantro or parsley for garnish.

Creamy Garlic Pasta Sauce recipe: 

Creamy garlic pasta sauce is a vital ingredient for conchita shell recipes. Often, the one you buy from the market is not satisfying enough. So, better be made at home with easy pantry ingredients. Also, it can be stored in the freezer for up to 1 month. Check the recipe out! 

Ingredients

1 Cup of Butter or Margarine

12 Cloves Garlic, Finely Minced

3 Tbsp of All-Purpose Flour

2 Cups of Light Cream

3 Tbsp Fresh Parsley, Roughly Chopped

1 Tsp of Kosher Salt or to Taste

½ Tsp of Freshly Ground Black Pepper or to Taste

Methods of preparing step by step: 

Step 1: First of all you need to bring out a small skillet and heat it over medium heat. 

Step 2: Add 1 cup of butter and minced garlic. Lowering the temperature, stir until the butter is completely melted. 

Step 3: Sprinkle 3 tbsp of flour in several batches and continue whisking for 2 minutes to 3 minutes. 

Step 4: Add 2 cups of light cream and mix finely. Simmer for not more than 3 minutes. 

Step 5: You will notice that the mixture has thickened a little bit. 

Step 6: Remove the skillet from heat. 

Step 7: Sprinkle salt and freshly ground black pepper as per your taste. Also, stir in roughly chopped 3 tbsp of fresh parsley. 

You can serve it with spaghetti or as a plunging sauce for steak, lamb roast, chicken or shrimp. These are the options for you to serve with super creamy garlic sauce.
