Albers Cornbread Recipe

Cornbread always makes me nostalgic. Those childhood times when my mother used to bake cornbread for me is not less than any valuable treasure. I can still feel the fresh sweet fragrance. It is a common side dish in America. There are plenty of cornbread recipes on the internet. Still, I want to share mine with you. My Albers cornbread recipe is given below.

Albers yellow cornmeal cornbread recipe: 

I’m sharing the most common version of the cornmeal cornbread recipe that you can try with even butter or jam. This tastes amazing with food like southern fried chicken, salads, chili, etc. I’m using Albers yellow cornmeal. 

Ingredients: 

  • Albers yellow cornmeal about 1 cup
  • Granulated sugar about 1/4 cup
  • All-purpose flour about 1 cup
  • Baking powder about 1 tbsp.
  • Salt about 1 tsp
  • Milk about 1 cup
  • Vegetable oil about 1/3 cup
  • Large egg about 1 

Directions: 

Step 1: While preparing cornbread, you need to preheat the oven to 400 degrees F at first. 

Step 2: Bringing out a baking dish, grease the baking dish with an oil brush or cooking spray.

Step 3: Take a large bowl and add 1 cup of Albers yellow cornmeal, 1 cup of all-purpose flour, 1 tbsp. of baking powder, and 1 tsp of salt. Combine all the ingredients well.

Step 4: In another bowl, add 1 cup of milk, 1/3 cup of vegetable oil, and 1 large egg. Whisk the ingredients all together. 

Step 5: Now pour the milk mixture slowly into the cornmeal mixture and keep stirring with a whisk until they are finely blended. 

Step 6: Pour the blended mixture into the baking dish.

Step 7: In the oven, place the baking dish and bake it for 25 minutes. 

Step 8: Tuck a wooden stick into the cornbread. The stick should come out clean without any mixture sticking. 

Cut your cornbread into pieces and serve with whatever you want. 

Corn Cake Recipe:

Among Albers cornmeal recipes, corn cakes are great in taste. As snacks, you can easily have them. Preparing the corn cake is easy enough. This corn cake is prepared with cream corn, cheese, margarine. So, this will create great texture and your family is going to love it. 

Ingredients: 

  • Cream corn about 1 can (14 ounces)
  • Albers white corn meal about 1/4 cup
  • All-purpose baking mix about 3/4 cup
  • Lightly beaten large egg about 1
  • Melted margarine about 2 tbsp.
  • Granulated sugar about 2 tbsp.
  • Vegetable oil about 4 tbsp.
  • Sliced cheese about 1/4 cup
  • 5 slices of ham 

Instructions: 

Step 1: Take out a blender. Pour the 1 can of cream corn into the blander including all-purpose baking mix, white cornmeal, margarine, beaten eggs, and sugar.

Step 2: Cover the blender and blend well until the mixture looks like a puree.

Step 3: In a medium-sized bowl, pour the mixture and let it sit for a few minutes. 

Step 4: By this time, brush a skillet with vegetable oil and heat over medium-low heat.

Step 5: With a ladle, pour the mixture into the hot skillet and spread clockwise. 

Step 6: Cook the corn cake until the bubbles are showed and the bottom is a golden brown color. 

Step 7: Flip the corn cake and cook for 2/3 minutes. 

Step 8: Place the cheese slices and ham on the top of the bread. Folding the bread, cook for a few seconds. 

Step 9: Transfer the corn cake into a serving dish. 

Follow the directions for the remaining mixture. 

Homemade Baking Mix:

Apart from Albers cornmeal cornbread recipe, this corn cake is so delicious. This is a very delicious snack that can be prepared anytime. In corn cake, the all-purpose baking mix is an important ingredient. I have used here homemade baking mix. It’s available in supermarkets also but I prefer using it in my homemade version. In case you are interested in a homemade baking mix. I’m sharing the recipe so that you can store it for further usage. 

Ingredients: 

  • All-purpose flour about 9 cups
  • Dry milk powder, non-fat about 1 cup
  • Baking powder about 5 tbsp.
  • White sugar about 1/4 cup
  • Salt about 1tbsp.
  • Vegetable shortening about 1 cup

Directions:

Step 1: Take a large bowl and add 9 cups of all-purpose flour, 1 cup of dry milk powder, 5 tablespoons of baking powder, 1/4 cup of sugar, and 1 tablespoon of salt. Whisk all ingredients together.

Step 2: Grate the vegetable shortening. If you don’t have vegetable shortening, you can use butter instead. Freeze the butter in a fridge before grating it. 

Step 3: Pour half of the grated butter or vegetable shortening in the flour mixture to mix them well.

Step 4: Now add the rest of the butter and whisk all the ingredients. 

The mixture looks like crumbled powder. In an airtight jar, pour the mixture and keep it in a dry place. 

Note: Make sure that you are using baking powder not baking soda.
