Hearty chicken stew recipe: 

I always prefer chicken stew for dinner. This easy to prepare the main dish you know is tasty can be served with your favorite side dishes. I think this version of chicken stew goes best with the baked bread. The ingredients are easily available at super shops and markets. This chicken stew recipe doesn’t require the oven, so you can cook it in your regular saucepan over simmering for almost 1 hour. Don’t think twice, get the ingredients, listed below, and jump for cooking. 

Ingredients: 

  • Chicken thighs about 2 pounds
  • Red bliss potatoes about 1 pound
  • Onions, small, about 4
  • Garlic cloves about 6
  • Carrots about 1 pound
  • Green beans about 2 cups
  • Olive oil 1 tbsp.
  • Hot pepper sauce about 1 tbsp.
  • Thyme springs about 1/4 cup
  • Kosher salt 11/2 tsp.
  • Ground black pepper about 1/2 tsp.
  • Powdered cinnamon about 1/2 tsp. 
  • 2 bay leaves.
  • 3 cups of water.

Directions: 

Step 1: Firstly, I’m preparing all my ingredients by chopping, slicing as needed. For the chicken thighs, I’m going to make them skinless. If you like chicken skins, you can keep them. Then I’m going to cut the onions into quartered sizes and peel the garlic cloves. Also, I’m going to wash and cut the red bliss potatoes into coin sizes. They look good when you serve it. After collecting and preparing all these ingredients, I’m going to start cooking. 

Step 2: I’m using here a large saucepan for cooking. I’m super comfortable with this when I prepare the chicken stew. I’m going to pour here the olive oil and place the chicken thighs for browning. 

Step 3: I’m going to season the chicken with salt and black pepper. Turning on over medium-low heat, I’m going to slightly fry the chicken thighs until they get light brown color. When the browning process is done, I’m removing the chicken thighs, and transferring it into another bowl. 

Step 4: Now, I’m going to add the onion slices, carrots, green beans in the saucepan, and stir them for 20 minutes or until they are fork-tender.

Step 5: After that, I’m going to place the browned chicken into another saucepan including 3 cups of water. Cover the saucepan with a lid and let the heat lower into simmering. Keep the saucepan covered for 30 minutes. Within these 50 minutes, the chicken becomes completely tender and juicy too. Removing the chicken from heat, I am going to shed the chicken from the bone using butter knives or forks.

Step 6: I’m going to add the cooked potatoes-bean mixture into the chicken stew. For adjusting the flavor, I’m going to add the thyme spring, hot pepper sauce, bay leaves, kosher salt, black pepper, and white pepper. Stirring in the heat for 3 minutes, I’m removing the saucepan from heat. 

With this process, you can prepare this easy chicken stew for less than 1 hour. So, enjoy this delicious chicken item at dinner or lunch with your family members. 

Stewed Chicken Recipe: 

My previous recipe is a super easy and regular version of chicken stew. If you are looking for chicken stew parties or family reunion, I think this chicken stew with potatoes and vegetables is going to be perfect. I’m also adding some extra spices to increase the taste of the chicken stew. So, when you prepare your dish, you should not skip any ingredients or steps. You can garnish the dish with fresh parsley. Ingredients: 

  • 2 tablespoons of butter or margarine
  • 2 lbs boneless and skinless chicken breasts, sliced
  • 1 stalk of celery, chopped
  • Kosher salt about 1 teaspoon
  • Garlic cloves about 3, diced 
  • 3 cups of chicken broth 
  • 1 tablespoon of all-purpose flour
  • 3 lbs of baby potatoes, sliced in quarter 
  • 2 lbs of small carrot, sliced in coin size
  • 2 shallots, finely chopped
  • Black pepper to taste
  • White pepper 1/2 teaspoon

For garnish: 

  • Fresh parsley 

Instructions: 

Step 1: In order to prepare the chicken stew, you need to add the butter in a large saucepot over medium heat. Using margarine as a substitute for butter is a very good option. Margarine is healthier than butter. When the butter is melted, add the coin-sized carrots and chopped celery into the saucepot. Stirring the carrots and celery with a spatula, season them with salt, white pepper, and black pepper. Cook the vegetables stirring from time to time until they get tender. The process takes not more than 5 minutes. 

Step 2: When the vegetables are tender enough, add the diced garlic and stir well. After almost 1 minute, you can feel fragrant of cooked vegetables and garlic. Sprinkle 1 tbsp. of flour into the vegetable, and stir until they are well-coated. 

Step 3: Add a splash of chicken broth into the vegetable mixture and stir to set the flavour. You can also use wine into the vegetable mixture for better taste. Both chicken broth and wine do the same work, setting the flavor. Well, now you have to sprinkle some salt and ground black pepper for seasoning. This seasoning process has to be done twice to get the taste. Include bay leaf and sliced potatoes and stir them for 1 minute. 

Step 4: This the last step of your cooking. Place the chicken into the mixture and pour the whole of the chicken broth. Cover the saucepot, turning down the heat into a simmer. Let the chicken cook for 30 minutes. After 30 minutes, you will notice the chicken breast slices are no longer pink, and the chicken broth has gotten thicker. 

Step 5: Transfer the chicken strew into a medium-sized bowl, removing from heat. Now, garnish your dish with chopped parsley before serving.
