Ingredients of key lime pie

For the graham cracker crust

  • 2 cups of graham cracker crumbs (usually crushed with a food processor, about 1 ½ packages)
  • 1/3 cup of melted butter or margarine
  • 1/4 cup of granulated sugar
  • 1 teaspoon of cinnamon

For the key lime filling

  • 3 large eggs, separated; at room temperature is best
  • 1 ounce of can sweetened condensed milk
  • ½ cup of key lime juice
  • 1 tbsp of lemon juice
  • 2 tsp of grated lime peel (lime zest)
  • 2 tbsp of sugar

For the whipped topping

  • 2 cups of heavy whipping cream
  • 2 tbsp of powdered sugar
  • ½ tsp of vanilla extract

Methods of Preparing Christmas Key Lime Pie Step by Step:

For the graham cracker crust

Step 1: Take out a large bowl of the food processor, and add 2 cups of graham cracker crumbs, 1/3 cup of melted butter, ¼ cup of granulated sugar and 1 tsp of cinnamon.

Step 2: Process and lightly grease a 10-inch pie plate. Place the mixture finely and make sure there is no space left. 

Step 3: Set the oven timer 10 minutes at the temperature of 350 degrees F. 

Step 4: When done, let the pie plate cool in the wire rack. By this time let’s make the filling of rum pie.

For the key lime filling

Step 1: Take out a large bowl and whisk egg yolks finely.

Step 2: Add 1 ounce of sweetened condensed milk, ½ cup of key lime juice, 1 tbsp of lemon juice along with 2 tsp of lime zest. Mix them together until smooth.

Step 3: In the bowl of mixer, add egg whites, beat gradually. Meanwhile, you need to add 2 tbsp of sugar in 2 or 3 batches. Keep beating until you notice soft peak foam. 

Step 4: Gently fold the foam into the yolk mixture with a wide spatula. 

Step 5: Then, spoon into the prepared crust. 

Step 6: Set the oven at the temperature of 325 degrees F and bake for 20 minutes. 

Step 7: Remove from the oven and let cool. Then cover and keep the plate in the refrigerator for 4 hours to 8 hours. 

For the whipped topping

Step 1: In a bowl, add 2 cups of heavy whipping cream, beat with a mixer until peaky and stiff. Sprinkle 2 tbsp of powdered sugar and ½ tsp of vanilla extract, beating for more. 

You can store the topping in the refrigerator. When serving, just add the topping above. Bon appetit!
