How to Make Nigerian Meatpie Step by Step:

Make the pastry:

Step 1: in a large mixing bowl, mix together 4 cups of all-purpose flour, 1 tbsp of sugar, 1 tsp of salt, and 1 tsp of baking powder.  With a whisk mix the dry ingredients finely.

Step 2: Add 1 cup of cubed butter and rub it with the flour mixture until you notice a crumbly texture.

Step 3: Now, beat 2 eggs with ¼ cup of cold water.

Step 4:  After that, add the egg-water whisk to the flour mixture, keep mixing them until dough is formed. I warn you not to over mix!

Step 5: Wrap the dough with cling film and refrigerate it for 30 minutes.

Make the filling:

Step 1: Take out a large pan and heat 2 tbsp of extra virgin olive oil on medium-low heat.

Step 2: Descent ½ cup of chopped onion, and saute them for 5 minutes until they get transparent and translucent (not brown).

Step 3: Add ¼ cup of diced carrots, and cook them for 5 more minutes until tender.

Step 4: Then add the ground beef, and cook for 8 to 10 minutes until dark brown.

Step 5: Season the filling with salt and ground black pepper as per need.

Step 6: Then add 2 tbsp of flour, and 1 tsp of thyme. Mix them all finely and cook about 2 minutes more.

Step 7: Add the cubed potatoes, after pouring the beef broth or water.

Step 8: Reducing the heat, bring it to a simmer for 15 minutes until it gets thicker and fragrant.

Step 9: Set the oven for preheating at the temperature of 350 degrees F.

Step 10: Dividing the dough into 4 pieces, shape them in your desired size.

Step 11: Now in that shaped pie, place 2 tbsp of meat mixture into the center.

Step 12: Brushing the edges with water, fold over the dough in order to seal with a fork or finger nicely

Step 13: Place them into a baking sheet, and brush with beaten eggs. Bake for 30 minutes until the outer crust gets golden in color.
