- Twelve ounces or 5 kilograms of white chocolate (bars or chips)
- One ounce or almost 500 grams of milk chocolate chips, melted
- A can of sweetened condensed milk (it should weight fourteen ounces or more than 6 kilograms)
- Three tablespoons of unsalted butter
- One teaspoon of vanilla extract
- Half a teaspoon of coarse salt
- 1/4th cup of unsweetened coconut flakes, shredded
- 1/3rd cup of sweetened coconut flakes, shredded
- Gel-paste food coloring, either in pink or red, two or three drops
- Plastic wrap, aluminum foils, or parchment paper
Method of Making the Neapolitan Coconut Candy Step by Step:
Step 1: Line a square cake pan (8 inch) with plastic wrap. Make sure the extra overhang is left on all sides for about 2 inches.
Step 2: Place a medium sized pot up to medium heat, pour the butter, white chocolate, sweetened condensed milk, vanilla extract and coarse salt. Melt the ingredients together and keep stirring until it is smooth.
Step 3: Remove the mixture from heat and as it cools down, mix the shredded coconuts, both sweetened and unsweetened, into the pot.
Step 4: Divide the mixture into 3 bowls.
Step 5: Mix melted milk chocolate into one bowl, mix food coloring into another. Stir both until mixed well. The third bowl shall remain plain.
Step 6: Now layer the cake pan by spreading the milk chocolate mix into the dish. Then spread the neopolitan coconut mixture on top of the bottom layer. Finally, spread the food coloring mixture on top.
Step 7: Place the dish into the fridge for at least 3-4 hours or overnight, till it becomes firm and gets candy-like texture.
Step 8: Take the dish out and unmold the candy block by discarding the overhang. Cut the block into slices. The slices should be one fourth of an inch in width and one or half an inch in length.
Step 9: store the bars wrapped with parchment paper and in a glass candy jar.
Note: The candies can be stored up to a week in the refrigerator.
