Last night, my son wanted to have some pancakes. But we ran out of milk yet I wanted to make the pancakes. It was almost midnight, so we didn’t want to go out at all rather I decided to try something new.
So, I went searching for how can I prepare a pancake recipe without milk. Besides, if you can get to prepare pancakes with lower calories, so why not? Also, milk in pancakes uses for dissolving the flour and other dry ingredients in order to prepare a smooth batter. Let’s jump to the recipe.

Fluffy Pancake Recipe Without Milk
Milk makes pancakes tastier, no doubt! But without milk, preparing pancakes isn’t impossible. I’m here using just plain water, and to add flavor I’m using vanilla extract. Substitutes for milk in pancakes can be water, rice milk, eggnog, half and half, etc.
Ingredients we need:
- 1 ½ cups of all-purpose flour or self-rising flour
- 3 ½ teaspoons of baking powder
- 2 teaspoons of baking soda
- ½ teaspoon of Kosher salt
- 1 ½ tablespoons of brown sugar; if it’s not available, use any type.
- 1 ¼ cups of water
- 1 large egg
- 3 tablespoons of butter, melted
- 1 teaspoon of vanilla extract
How to Make Pancakes Without Milk Step by Step:
Step 1: Take a large mixing bowl and sift 1 ½ cups of all-purpose flour, 3 ½ tsp of baking powder, 2 tsp of baking soda, ½ tsp of Kosher salt or a pinch, and 1 ½ tbsp. of sugar together.
Step 2: With a finger, make a well in the middle of the mixed dry ingredients, and pour ½ cup of water at first. Then whisk finely.
Step 3: Then pour 1 large egg into the semi-liquid mixture, and again mix lightly.
Step 4: Add 3 tbsp of butter into the mixture, mixing continuously with a fine whisk. Using a whisk always makes your batter smoother and fluffy.
Step 5: Now, to make the batter pitch-perfect liquid, add in the remaining water and 1 tsp of vanilla extract. Whisk for 5 more minutes to make it smooth.
Step 6: Take a non-stick griddle or pan, and heat over medium-high heat. I always set my non-stick griddle to 300 degrees F.
Step 7: When the griddle is hot enough (after 3 minutes), scoop ¼ cup of pancake batter for each pancake.
Step 8: Reduce the heat to medium-low, and wait until fizzes or bubbles form to flip. This won’t take more than 2 minutes.
Step 9: When the color is brown on the other side, remove it from heat.
This is optional but before serving, I like to pour some honey over it. With this amount of batter, you can prepare 10-12 pancakes that are quite enough for a family gathering. Here your milk free pancakes are ready to serve.
