  • 2 zander fillet
  • 1/4 cup of butter
  • 1 cup of water
  • 1 and 1/2 cups of white wine
  • 1 tsp of black peppercorns
  • 1/2 cup of sugar
  • 1/2 cup of carrot, sliced into ribbons
  • 3 red radish, sliced thinly
  • 1 white radish, sliced thinly
  • 6 red onion, broken into rings
  • 2 egg yolks
  • olive oil

Directions for preparing step by step:

Step 1: Get a saucepan—heat olive oil over low settings. Now, add the egg yolks and cook for around 30 minutes. 

Step 2: Before 10 minutes to finish off, bring the ingredients except for the vegetables themselves to the boil. Melt 1/2 cup of sugar beforehand. Cool it down for a minute.

Step 3: Now, pour the melted sugar over the carrot ribbons and let it pickle for around 10 minutes.

Step 4: Let’s focus on the fillets for now. Cut them in halves. Now Season it with salt and coat it with olive oil.

Step 5: Get the saucepan again. Place the fillets over medium settings. Cook the fillets for 2-3 minutes until they are crisp. Flip to the other side and add a 1/4 cup of butter. Continue to cook for another 3 minutes—Bast out the brown foams of butter. Smells are coming off.

This Italian dessert is gorgeous to look at and worthy of finishing off with the last spoon. This is basically a pound or sponge cake filled with creamy and chocolaty goodness.

There is the usage of ice creams as well. The tradition says you should have it in autumn. Tradition changes, right? At least for this one here. It is also tradition to use ricotta cheese, cocoa, citrus peel. It should be served semi-frozen. It might fall apart if it’s warm enough.

I have this zucotto recipe for quite a long time. Can’t wait to share it with you guys. Let’s jump into it.

Ingredients:

  • 1 vanilla sponge cake
  • 1/2 cup of granulated sugar
  • 1/4 cup of water
  • 1/4 cup of raspberry liqueur
  • 2 cups of heavy cream, chilled
  • 1/4 cup crater sugar
  • 4 oz of hazelnuts, more for garnish
  • 4 oz of chopped toffee bars, more for garnish
  • 1 pint of raspberries, more for garnish
  • chocolate ganache icing
  • vanilla bean creme Sauce

Directions for preparing step by step:

Step 1: Start with the oven. Preheat it to 350F.

Step 2: Place the hazelnuts in a layer on a baking sheet. Roast them till the skins start to split. Take off the oven. Rub them with a kitchen towel to remove the skins. Now, coarsely chop them. Set aside.

Step 3: Get a saucepan. Add 1/2 cup of sugar, 1/4 cup of water, and the raspberry liqueur. Bring to a boil and stir until the sugar has completely dissolved. Remove from the heat and set aside to cool.

Step 4: Cut the spongecake into thirds crosswise and lengthwise. Make 9 rectangles. Reserve the round layer to use on top. Now, cut each of the pieces diagonally in half. Brush both sides with the raspberry syrup. Line the inside of a bowl. Make a sunburst pattern. Use the small pieces of syrup-brushed pieces to fill in the gaps. Now, trim the cake top to make it even on all sides. Transfer the bowl to the refrigerator to chill.

Step 5: Place 2 cups of heavy cream and 1/4 cup of crater sugar in an electric mixer bowl. Beat for about 3 minutes. Gently add in the nuts, toffee, and raspberries. 

Step 6: Get the bowl from the refrigerator. Fill it with the cream mixture, and cover the top with the round piece. Cover it with a plastic wrap and refrigerate overnight.

Step 7: Place a steel rack and invert the zucotto onto it. Remove the bowl and the plastic wrap. Using a spoon, pour the ganache icing over the top. Make sure to coat the entire surface.

Step 8: Cut into wedges. Scoop the creme sauce on those. Garnish with chopped toffee, nuts, and berries if left any. Serve immediately. Enjoy!
