  • 1 large onion, diced
  • 4 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 28 oz of tomato puree
  • 2 tbsp of chopped fresh basil
  • salt to taste
  • freshly ground pepper

For Herb Seasoning:-

  • 2 tbsp of chopped fresh basil
  • 2 tbsp of chopped fresh parsley
  • 1 tsp of garlic, minced
  • 2 tsp of fresh thyme
  • 4 tablespoons olive oil
  • salt to taste
  • freshly ground pepper

Directions for preparing step by step: 

Step 1: Start with the oven. Preheat it to 375F. 

Step 2: Get the veggies. Wash them properly. Now, slice the eggplant, tomatoes, squash, and zucchini into 1 mm rounds; don’t have to be perfect, do your best. Set aside.

Step 3: Now, we are going to make a sauce. Get a saucepan—heat 2 tbsp of olive oil over medium-high settings. Now, add 1 diced large onion, 4 cloves of minced garlic, red and yellow bell peppers, and saute until soft. It will take about 10 minutes. 

Step 4: Now, season with salt and pepper. After that, add the can of tomato puree and stir until the ingredients are thoroughly combined. Remove the pan from heat, and then add 2 tbsp of chopped basil. Stir it for the last time and then smooth the surface with a spatula.

Step 5: Let’s get to the veggies again—time to arrange those in the sauce. Let’s get creative here. Arrange the veggies in alternating patterns. Do remember, though, to place them from the outer edge to the middle of the pan. However, the presentation brings about a significant factor for this unique dish. Finish it by seasoning with salt and pepper.

Step 6: Now to the special herb seasoning. Get a small bowl. Add 2 tbsp of chopped basil, 2 tbsp of chopped parsley, 1 tsp of minced garlic, 2 tsp of fresh thyme, 4 tbsp of olive oil, salt, pepper, and give it a good mix. 

Step 7: Now, spoon the seasoning over the veggies. We are done here.

Step 8: Cover the pan with aluminum foil and bake for around 40 minutes. After that, uncover, and then bake for another 20 minutes.

Ingredients:

  • 1 and 2/3 cups of all-purpose flour
  • 2 tsp of cocoa powder
  • 1 cup of granulated sugar
  • 1/4 tsp of baking soda
  • 1 tsp of baking powder
  • 1/4 tsp of kosher salt
  • 3/4 cup of unsalted butter, room temperature
  • 3 medium-sized eggs
  • 2 tsp of vanilla extract
  • 3/4 cup of buttermilk
  • red food coloring

For the Frosting:-

  • 3 sticks of unsalted butter, room temperature
  • 1 and 1/2 lb of sugar
  • 16 ounces of cream cheese, room temperature
  • 1 tsp of vanilla extract
  • 1/2 tsp of kosher salt

Directions for preparing step by step: 

For the Cupcakes:-

Step 1: Start with the oven. Preheat it to 350F. 

Step 2: Get a cupcake pan. Place cupcake papers in it.

Step 3: Get a large bowl. Add 1 and 2/3 cups of all-purpose flour, 2 tsp of cocoa powder, 1 cup of granulated sugar, 1/4 tsp of baking soda, 1 tsp of baking powder, 1/4 tsp of kosher salt. Sift the ingredients together and give it a good whisk.

Step 4: Get another bowl. Add 3/4 cup of unsalted butter, 3 eggs, 2 tsp of vanilla extract, and 3/4 cup of buttermilk. Whisk the wet ingredients. Don’t panic if it gets clumpy. Just take your time and combine well.

Step 5: Add the dry mixture into the wet mixture. Mix it until it is well combined. After that, add the red food color carefully.

Step 6: Now, distribute the batter evenly into the papers.

Step 7: Off to the oven for 15-20 minutes until the cupcake seems springy on touch. Transfer to a steel rack to cool completely. Meanwhile, let’s focus on the frosting.

For the Cream Cheese Frosting:-

Step 8: Get a large bowl. Add 3 sticks of unsalted butter and cream it. 

Step 9: Now, add 16 ounces of cream cheese to the butter. After that, add 1 tsp of vanilla extract and beat together.

Step 10: After that, whisk in 1 and 1/2 lb of regular sugar. If you want a firm buttercream, keep adding more sugar until it is thickened.

Step 11: Pour the buttercream into a piping bag. Cut off the tip. Now, add a large dash on top of each cupcake. Enjoy your dessert!

Rhubarb 

Rhubarb is actually a veggie, whereas most of my friends think that this one is a sour tasted fruit. These large stalks are used in sweeteners to balance out the flavor. In some regions of the world, it is sometimes even used as a medicine.

I have a gin recipe of rhubarb that you will enjoy. Use seasonal rhubarb to make this. You can also top the finished gin with soda water for a refreshing mood on a summertime evening.

Ingredients:

  • 1 cup of pink rhubarb stalk
  • 3 tbsp of caster sugar
  • 1/2 cup of gin

Directions for preparing step by step: 

Step 1: Start with the rhubarbs. Cut the stalks and put them in a jar with 3 tbsp of caster sugar. Shake well and leave overnight. The juice will come out eventually. Let’s come back after 24 hours.

Step 2: Now, add 1/2 cup of gin. Seal and shake well. Better leave for about 4 weeks before having a drink. The color will be paler overtime.
