2 Tbsp Olive Oil

One Teaspoon Brown Sugar

8 Cups Chicken Broth

Two 15-Ounce Canned Fire-Roasted Tomatoes

One 15-Ounce Can of Diced Tomatoes and Green Chilies

One Bunch Cilantro- Roughly Chopped

1-2 Jalapenos – Seeded and Diced

One 15-Ounce Canned of Black Beans or Pinto Beans – Drained

One Medium Onion- Diced

Juice of Two Lines – about Two Tablespoons

Two Ears of Corn on the Cob

Tortilla Strips, Sour Cream, Avocado – for Topping

Cooking Method

Step 1: Cut the chicken to ½ inch thickness. Now, add the chicken to a pan, add 1/ 2 teaspoon chili powder, 1/ 2 teaspoon garlic powder, 1/ 2 teaspoon cumin, and brown sugar. 

Step 2: Now add 1 tbsp oil over the chicken, rub the oil on both sides of the chicken. After rubbing the oil, add the spice mixture and Salt and pepper to season.

Now cook the chicken for 5 – 8 minutes on both sides over medium-high heat. Grill until they are fully cooked. After the chicken is thoroughly cooked, dice it and set it aside.

Step 3: While grilling the chicken, prepare the corn. Add corn in a pan, and pour oil, Salt, and pepper to season—Grill the corn for 8 minutes.

Keep stirring them once in a while until kernels begin to char a bit. Using a sharp knife, the kernels off of the cob

Step 4: Now in a soup pot, add chicken broth, green chilies, diced tomatoes, black beans or pinto beans, fire-roasted tomatoes, chopped onion, lime juice, grilled corn, garlic, jalapenos, and the leftover spices.

Step 5: Cook all the ingredients for a while. After they start boiling, reduce the heat and cook for about 10 minutes. Pour chicken, Salt, and pepper, cilantro for better flavor. Serve with your favorite toppings.
