Ingredients that You Will Need Are:

Four Pounds of Sweet Potatoes

Half a Cup of Butter

One and One-Fourth Cups of Light Corn Syrup

One-Fourth of a Cup of Honey

Two Tablespoons of Vanilla

One Cup (for Candied Sauce) and Two Tablespoons (for Garnish) of Light Brown Sugar

One Tablespoon of Cinnamon Powder

One-Fourth of a Teaspoon of Nutmeg

One-Fourth of a Teaspoon of Salt

Method of Preparing Patti Labelle Yams Step by Step:

Step 1: Wash the potatoes and ready a pot deep enough to hold all the potatoes. Fill it with water so the potatoes are covered fully. Boil the potatoes so they are tender but not mushy and can hold shape. While the potatoes are boiling in water, start making the candied sauce.

Step 2: Ready a baking dish where the candied sauce will be kept later. In a small saucepan, melt the butter first on low heat. Keep stirring while you add in one cup of brown sugar and allow it to dissolve with the butter. It will start looking like a thick paste at first.

Step 3: Add the nutmeg, salt, light corn syrup, honey, vanilla, and cinnamon powder to the butter and sugar mix and keep stirring until it reaches a smooth texture with medium liquid-like consistency. The amount should be enough to coat the potatoes.

Step 4: Once the candied sauce is ready set it aside and focus on the potatoes that should be done by now. Take the potatoes off the heat, drain the water. Since the water is boiling hot, it is wiser to scoop the potatoes off the water with a spoon or tongs.

Step 5: Fill a bowl with cold water and let the potatoes cool down a little. Leave them to cool for around 12-15 minutes. Set the oven to preheating at 350˚F

Step 6: Peel the outer skin off of the potatoes. Cut them into one-fourth on an inch thick circular shapes. If you want, you can cut it into any size you would like.

The thinner cut helps the potatoes absorb more sauce and has a higher possibility of tasting better than thick-cut shapes.

Step 7: Add the cut-up potatoes into the baking dish you readied earlier. Now, pour the candied sauce on the potatoes.

Mix them well so the coating is even. Lastly, sprinkle the two tablespoons of brown sugar on the potatoes.

Step 8: Place the dish into the oven and let it bake for an hour or so. Check the dish every 12-15 minutes and mix the sauce and potatoes by stirring loosely and let it bake more.

After it is done, serve with caramel sauce drizzled on top. You can also add vanilla ice cream if you would like the combination.
