Ingredients:

  • 2 packets of udon noodles
  • 1 cup of mushrooms, sliced
  • 3 bok choy, quartered 
  • 1/2 white onion, chopped
  • 2 stalks of scallions, diced
  • 1/2 lb of ground chicken
  • 1 tbsp of olive oil

For Noodle Sauce:-

  • 2 tbsp of dark soy sauce
  • 2 tbsp of oyster sauce
  • 1 tbsp of mirin
  • 2 tsp of brown sugar
  • 1/2 tsp of rice wine 

Directions for preparing step by step: 

Step 1: Get a small bowl. Add 2 tbsp of dark soy sauce, 2 tbsp of oyster sauce, 1 tbsp of mirin, 2 tsp of brown sugar, and 1/2 tsp of rice wine. Mix well. Set aside. 

Step 2: Get a pot and boil water into it. Add 2 packets of udon noodles.

Stir until the noodles are separated. It will take around 1 – 2 minutes. Don’t overcook as they come precooked. Otherwise, the noodles might get too soft.

Step 3: Rinse and drain the noodles. Drizzle a bit of oil and set aside.

Step 4: Get a saucepan—heat 1 tbsp of olive oil. Add 1/2 lb of ground meat and stir fry for about 1 minute. 

Step 5: Now, add 1 cup of mushrooms, 3 quartered bok choy, 1/2 sliced white onion, 2 stalks of diced scallions, and stir fry together for about 1 minute.

Step 6: Add in the noodles and the sauce. Keep frying for 3 – 4 minutes. Toss them gently in the meantime. Take off. Serve immediately. Enjoy!

Ugali

Ugali is a popular kind of porridge from Africa. It is known by some other names depending on the region, such as Ugali Pap, or sometimes Nshima. This unique dish is made from maize, millet, sorghum flour. However, maize or corn is the most common. It is a thick porridge that is first boiled in milk or water until it has a stiff and doughy texture.

You can resemble it with grits and polenta. Ugali is usually served with meat. If you are vegetarian, luckily you might find ugali that is served with veggies.

Ingredients:

  • Entrails of a deer including heart, liver, and kidneys
  • Beef suet as the same weight as entrails
  • 1 lb of streaky bacon
  • 2 tsp of cinnamon powder
  • 2 tsp of ground mace
  • 2 tsp of grated nutmeg
  • 3 pounds of de-stoned raisins
  • 1/2 lb of sliced dates
  • 8-10 cloves
  • freshly ground black pepper
  • 1/2 lb of candied orange and lemon
  • 2 lemon juices
  • Sufficient shortcrust pastry
  • salt to taste

Directions for preparing step by step: 

Step 1: Start with washing off the entrails. Remove the fat from them.

Step 2: Add the suet and bacon. Finely mince it.

Step 3: Time to season. Season with 8-10 cloves, 2 tsp of mace, 2 tsp of grated nutmeg, 2 tsp of cinnamon, pepper, and salt.

Step 4: Now, mix in the raisins, sliced apples, candies, lemon juice, and the de-stoned dates.

Step 5: Off to prepare enough shortcrust pastry. Line them in a suitable size and make a lid.

Step 6: Now, fill the pie with the mixture. After that, add the lid and make air holes, and use pastry offcuts to decorate.

Step 7: Off to the oven. Cook for around 2 hours at 350F.

Step 8: It should be done by now. Take off the oven. Pour some white wine into the air holes before serving. Enjoy!

No other country like Italy loves their pasta more than anything else, and there are so many varieties to try.
