Ingredients that You Need for Making Chicken Modiga Recipe with Mushrooms Are:

Four to six Chicken Breasts- hammered thin (can be replaced with steak for Steak Modiga)

Extra virgin olive oil

Salt and pepper

Panko bread crumbs

Cloves of Garlics, minced

¾ cup Butter divided

Half pound mushrooms, sliced

One cup frozen peas

Dried Mushroom or chicken broth

One cup heavy cooking cream

One fourth cup Marsala wine

Two tablespoons flour

Half cup shredded provel cheese

Method of Preparing Modiga Chicken with Mushroom:

Step 1:

Add two cups of water into the dried porcini mushrooms. Need to boil for a couple of minutes. It will bring an excellent mushroom broth. Also, you can substitute it with chicken stock.

Step 2: 

Now make garlic infused olive oil blend. Take half a cup of olive oil and add the minced garlic. The garlic flavor will nicely infuse in the oil. Later when you need olive oil, just take from this mixture for the right amount of garlic flavor.

Step 3:

Hammer the chicken breasts to half inch thickness. Put into a Ziploc bag. Now add three tablespoons of olive oil, and salt. Dredge them in bread crumbs. 

Step 4: 

Heat a sauté pan on medium flame. Add two tablespoons of olive oil and one teaspoon butter. Put the pounded chicken on the pan and fry until they get brown on both sides. Remove from the sauté pan, and set them warm in the oven

Step 5:

Now on a clean frying pan add one tablespoon olive oil and one teaspoon butter. Stir fry the mushroom until brown. Stir fry the peas in the same oil and set aside.

Step 6: 

Pour half cup of mushroom/chicken broth on the pan. Put the flour in the broth and on low heat. Whisk the mixture until it turns into smooth gravy. This will be our fancy Modiga sauce. Make sure there is no lump left in the pan. Add some more broth. Stir repeatedly. Put the Marsala wine and cream in the roux. Stir constantly. If you are using mushrooms, chop them and add to the roux. Mix the shredded provel cheese now.

Step 7: 

Top the chicken with the cheesy Modiga sauce and keep the lead on. Serve with buttered noodles. The cheese sauce will slide down the noodles and give it a sweet creamy and tangy taste. Enjoy!
