Method of Preparing the Italian Chicken Pasta Soup Step by Step:

Step 1: In a large Dutch oven or pot, heat the olive oil over medium heat. Cook, stirring regularly, for 2 minutes after adding the chopped shallots. Cook for 3-4 minutes, stirring constantly, after adding the celery and carrots.

Step 2: Season with salt and pepper and add the broth, bay leaves, fresh rosemary and thyme. Bring the soup to a boil, then reduce to a low heat and stew for 20 minutes, uncovered.
