Oatmeal Cookie Recipes Without Eggs

For both recipes, I have used rolled oats. Also, instant oatmeals are preferable whichever is available. Let’s jump to the recipe.

Plain Oatmeal Cookie Recipe

This recipe is from my grandmother’s old cook book. I have been cooking these cookies from my childhood. A few weeks earlier, I prepared these cookies for my vegan friend. The recipe is given below:

Ingredients We Need:

1/2 Cup of Unsalted Butter, about 1 Stick, Softened

1/4 Cup of Sugar

1/2 Cup of Packed Brown Sugar

1 Tsp of Vanilla Extract

1 Tbsp of Water

1 Tbsp of Vegetable Oil

½ Cup of Raisins, 2 Boxes

1/2 Cup of Whole Wheat Flour or All-Purpose Flour

1 1/2 Cups of Rolled Oats

1 Tsp of Baking Soda

1/2 Tsp of Ground Cinnamon

Methods of Preparing Healthy Eggless Cookies Step by Step:

Step 1: Start by preheating the oven at the temperature of 350 degrees F. 

Step 2: Take out a large mixing bowl and add ½ cup of unsalted softened butter, ¼ cup of sugar, ½ cup of brown sugar, and 1 tsp of vanilla extract. With a hand mixer, beat them for 2 minutes to 3 minutes until it becomes creamy and a little foamy. 

Step 3: Sprinkle 1 tsp of baking soda, ½ cup of raisin, 1/2 tsp of ground cinnamon and mix finely. 

Step 4: Sieve ½ cup of whole wheat flour in 2 batches and gently fold. 

Step 5: Lastly, add 1 ½ cups of oats. The cookie dough is now almost rigid. So, add 1 tbsp of water. Mix then pour 1 tbsp of vegetable oil.

Step 6: Prepare the baking sheet and drop by a spoonful. You will have 12 -14 cookies. 

Step 7: Place the baking sheet to the preheated oven and bake for 10 minutes.

When done, remove from oven and let cool for at least 5 minutes before having.

Recipe of Oatmeal Cookie without Raisins

My eldest son hates raisins. So, I tried to prepare oatmeal cookies without raisins. The recipe was experimental but it turned out so good that I had to share these recipes. Let’s proceed to the recipe. 

Ingredients We Need:

2 Cup of All-Purpose Flour Plus 6 Tbsp More

1 ½ Tsp of Ground Cinnamon

2/3 Tsp of Baking Soda

2 Cups of Unsalted Butter, Softened at Room Temperature

3 Tbsp of White Granulated Sugar

2 Cup of Light Brown Sugar

6 Tsp of Water

6 Tsp of Pure Vanilla Extract

4 Cups of Leftover Oats

Methods of Preparing Leftover Oatmeal Cookies Step by Step:

Step 1: Set the oven for preheating at the temperature of 350 degrees F. Let heat for at least 10 minutes. 

Step 2: Prepare the cookie sheet by lining with parchment paper and set aside. 

Step 3: In a bowl, sieve 2 cups of all-purpose flour, 1 ½ tsp of ground cinnamon, and 2/3 tsp of baking soda. Whisk them together. 

Step 4: In another bowl, take 2 cups of unsalted butter, 2 cups of light brown sugar, and 3 tbsp of white granulated sugar. 

Step 5: Using spatula, start smashing and mixing. When it turns into paste like consistency, then switch to the wire rack and beat for 3 minutes or until smooth, light and fluffy mixture. 

Step 6: Add 6 tsp of vanilla extract and 6 tsp of water. Beat it again until completely well combined. 

Step 7: Add ½ portion of the dry flour mixture and mix finely. When done, add the rest. Continue mixing until there is no dry ingredients left. 

Step 8: Lastly, 4 cups of leftover oats and fold them in gently.

Step 9: In the prepared sheet, place them about a few inches apart. Each of them will be amounted as 1 ½ tbsp size cookies.

Step 10: Bake in the preheated oven for 10 minutes to 12 minutes.

After 12 minutes, remove from the oven and if you want to store them let them cool at first then in an airtight cookie jar store up to 2 weeks. 

Conclusion:

Eggless cookies are crunchy in edges and soft inside. There are lots of people out there with egg allergies and also vegans can’t enjoy cookies because of eggs.
