Recipe of Jamaican Baked Chicken

The theory is normal: prepare the paste, coat the chicken with the paste and bake it. Here is the trick of baking it. The paste must be handmade, there is no shortcut for this paste recipe. Let’s see what we have on our ingredients list. 

Ingredients we Need:

  • 2 jalapeno peppers, halved and seeded
  • ½ onion, peeled and halved
  • 2 cloves garlic, finely minced
  • 1 ¼ ” thick slice fresh ginger
  • 1 tbsp. of extra virgin olive oil
  • 1 tbsp. of white wine vinegar
  • 1 tsp. of jerk seasoning
  • 1 tsp. of ground allspice
  • 1/4 tsp. of Kosher salt
  • 4 boneless, skinless chicken breast, halves
  • ½ mango, peeled and finely chopped (for garnish)
  • 1 tbsp. of  fresh cilantro, finely chopped (for garnish)

How to Bake Chicken Jamaican Style Step by Step:


Step 1: Start by preheating the oven at the temperature of 450 degrees F. 

Step 2: Now, spray a 13 X 9-inch baking pan or baking sheet with vegetable spray. Set it aside for further use.

 Step 3: Take a food processor. Add halved and sliced jalapeno peppers, onion, garlic, ginger, olive oil, 1 tsp of white wine vinegar, 1 tsp of jerk seasoning, 1 tsp of ground allspice, and ¼ tsp of kosher salt. Process all the ingredients like a thick puree or paste- scraping down the sides as needed.

 Step 4: Spreading the jalapeno mixture or paste on both sides of chicken breasts, place in prepared baking dish. 

Step 5: Bake the chicken breasts for about 25 minutes. Check the internal temperature of the breasts, whether it is 165 or not. If not, then bake for 5 more minutes.

 Remove the chicken breasts from the oven and serve with proper topping. Due to plate presentation, place chicken on the plate along with chopped mango and garnish with fresh cilantro.

Note: I have used mangoes here. You can use guava to prepare guava glazed chicken.
