With half runner green beans, you can prepare the best ever side dishes. They preferably can be served at any meal, even at breakfast. Also, you don’t need hours and hours to prepare. This is an absolutely easy recipe and I wonder why I haven’t tried beans like this before.  Let’s move to the recipe.

Salt Pork Green Beans Ingredients

1 tbsp of extra virgin olive oil

½ cup of red medium onion, finely diced

1 ham hock

2 tbsp of garlic cloves, finely minced

1 1/2 pounds of green beans, nicely trimmed and snapped in half

1 cup of chicken broth

2 cups of lukewarm water

1 pound of new potatoes, quartered

1 cup of additional chopped ham, optional

1 tsp of Kosher salt or as per taste

½ tsp of freshly ground black pepper or as per taste

Methods of Preparing Old Fashioned Green Beans and Potatoes Step by Step:

Step 1:  Bring out a dutch oven and pour 1 tbsp of extra virgin olive oil over medium heat. If you don’t have EVOO, then any type of seed oil will work.

Step 2: When the oil is warm enough, add ½ cup of finely chopped onion, and 2 tbsp of minced garlic. Saute them for 5 minutes or until the onions get translucent.

Step 3: Add 1 ½ lb of green beans and 1 ham hock, stir in garlic onion mixture.

Step 4: Pour 1 cup of chicken broth and 2 cups of lukewarm water. You may need less water. But the beans should be covered completely with water and broth.

Step 5: Bringing the mixture to a boil, reduce the heat to a simmer. Cover the Dutch oven and let cook for 40 minutes or until the liquid mixture turns into a deep brownish green color and the beans are finely cooked.

Step 6: In the middle of simmering, add the 1 pound of quartered-cut potatoes and the additional 1 cup of chopped ham.

Step 7: When done, remove from heat and also discard the ham hock, chop off the bone and again place back into the Dutch oven

The half runner green beans are ready to enjoy. Using a slotted spoon, strain the liquid and serve!

Notes

In the ingredients list, I have written salt and pepper but didn’t use it because my ham was very salty. Some of them you get from the market, tends to be very salty, thus you don’t need to use seasoning. I tasted my dish before seasoning so I knew. Never add seasoning before tasting.

Conclusion:

The usage of chicken broth and additional ham, provides the meaty touch that increases the taste in thousands. Beans cooked like this, can bring a smile to anyone just after one mouthful. Explore new cooking experiences. Until then bon appetit!
