Middle layer:

Two Pounds of Sweet Potatoes

Half a Teaspoon of White Sugar

Three Packages of Softened Cream Cheese

One-Fourth of a Cup of Heavy Whipping Cream

Three Eggs

Three-Fourth of a Cup of Packed Brown Sugar

One-Fourth of a Cup of Butter

One-Fourth of a Cup of Heavy Whipping Cream

One Cup of Chopped Pecans

Method of Preparing the Sweet Potato Cheesecake Step by Step:

Step 1: Preheat the oven to 350 degrees Fahrenheit. Combine graham cracker crumbs, 1/4 cup of sugar, and 1/4 cup of melted butter or margarine, in a mixing bowl.

In a 9 1/2-inch springform pan, press the mixture into the bottom using a small bowl or spatula. Remove from the oven after 10 minutes and set aside. Turn on the oven.

Step 2: In a baking dish, place the potatoes. Bake for 1 hour, or until a knife inserted in the center easily passes through. Allow sweet potatoes to cool enough to handle before peeling and pureeing.

Step 3: Combine together the cream cheese, 3/4 cup white sugar, and 2 tablespoons white sugar until smooth. 1 1/2 cups sweet potato puree, sour cream, and 1/4 cup cream One at a time, beat in the eggs, mixing well after each addition. Fill the crust with the filling.

Step 4: Bake for 1 hour at 350 degrees F, or until a tester inserted near the center comes out clean (the center may still be slightly jiggly). Turn the oven off. Allow the cake to sit in the oven for 1 hour with the door ajar.

Step 5: In a heavy small saucepan, combine brown sugar and 1/4 cup butter or margarine. Stir constantly over low heat until the sugar has dissolved. Bring to a boil over high heat.

1/4 cup cream, followed by nuts. Pour the heated topping over the cheesecake, spread evenly to create a smooth layer. Serve with ice cream or hot cocoa, if you wish. You can store the rest of the sweet potato cheesecake in the freezer.

Although this recipe doesn’t include it, there’s a well-known suggestion that sweet potatoes go well with nutmeg or cinnamon flavor. So, if you want to add a bit of nutmeg or cinnamon powder that would be alright. Sweet potato maple layered cheesecake is a variation of this dish that you can try out too. You will need maple syrup for that.
