Method of Preparing the Sweet Potato Cheesecake Step by Step:

Step 1: Preheat the oven to 350 degrees Fahrenheit. Combine graham cracker crumbs, 1/4 cup of sugar, and 1/4 cup of melted butter or margarine, in a mixing bowl.

In a 9 1/2-inch springform pan, press the mixture into the bottom using a small bowl or spatula. Remove from the oven after 10 minutes and set aside. Turn on the oven.

Step 2: In a baking dish, place the potatoes. Bake for 1 hour, or until a knife inserted in the center easily passes through. Allow sweet potatoes to cool enough to handle before peeling and pureeing.

Step 3: Combine together the cream cheese, 3/4 cup white sugar, and 2 tablespoons white sugar until smooth. 1 1/2 cups sweet potato puree, sour cream, and 1/4 cup cream One at a time, beat in the eggs, mixing well after each addition. Fill the crust with the filling.

Step 4: Bake for 1 hour at 350 degrees F, or until a tester inserted near the center comes out clean (the center may still be slightly jiggly). Turn the oven off. Allow the cake to sit in the oven for 1 hour with the door ajar.

Step 5: In a heavy small saucepan, combine brown sugar and 1/4 cup butter or margarine. Stir constantly over low heat until the sugar has dissolved. Bring to a boil over high heat.

1/4 cup cream, followed by nuts. Pour the heated topping over the cheesecake, spread evenly to create a smooth layer. Serve with ice cream or hot cocoa, if you wish. You can store the rest of the sweet potato cheesecake in the freezer.
