I have shared two recipes, the first one is completely vinegar based and a lot healthier and the second one is for those who like their coleslaw creamy and a little soggy. Both tastes amazing and ridiculously easy to prepare. 

How to Make Vinegar Based Coleslaw?

Surely this recipe will be the easiest coleslaw recipe for you, if you have fast cutting skill. Easy or not but the taste is amazing. The dressing here is prepared with low acidic apple cider vinegar, Dijon mustard, olive oil and a little honey.

The honey-mustard combination makes it so tangy. Whether eaten only coleslaw or with smoked brisket sandwich, the taste rate is ten on ten. Let’s proceed to the recipe.

Ingredients we Need: 

1 ½ Cup of Green Cabbage, Finely Shredded

1 Cup of Red Cabbage, Thinly Sliced

1/3 Cup of Thinly Sliced Green Onion

1 Tbsp of Dijon Mustard

1 Tbsp of Honey

1/4 Cup of Extra Virgin Olive Oil

1 Tsp of Celery Seed

1 Cup of Carrots, Whole Shredded

1/4 Cup of Apple Cider Vinegar

½ Tsp of Kosher Salt or to Taste

¼ Tsp of Freshly Cracked Pepper or to Taste

Methods of Preparing Low Calorie Coleslaw Step by Step:

Step 1: Take out a small mixing bowl and pour ¼ cup of apple cider vinegar, 1 tbsp of Dijon mustard, 1 tbsp of honey, and ¼ cup of extra virgin olive oil. Mix the ingredients finely together. 

Step 2: In another mixing bowl, add 1 ½ cup of shredded green cabbage, 1 cup of shredded carrots, 1 cup of red cabbage, 1/3 cup of thinly sliced green onion, and 1 tsp of celery seed. Toss to mix up all the ingredients together. 

Step 3: From the dressing, add a small amount of dressing into the fresh vegetable mixture. With a spatula, mix finely until combined. 

Step 4: Next, pour the rest of the dressing in order to have a perfect coleslaw. 

Step 5: Taste and season with ½ tsp of kosher salt and ¼ tsp of black pepper. You can change the amount as per your taste. 

Place the bowl into the refrigerator for at least 30 minutes before serving. 

Notes and tips:

  1. This is applicable for all types of angel hair cole slaw recipes. If you prepare the coleslaw ahead of time like your serving time is the next day, then keep the cabbage mixture and dressing separate or it will be watery and dull. 
  2. In the condition of undressed, unseasoned, and covered, coleslaw stays unharmed for up to 3 days. So, for storing, always use a fine bowl with a lid both for dressing and vegetable mixture. 
  3. If you don’t cut the vegetables super thinly, then you can use white vinegar instead of apple cider vinegar. I haven’t used it because my vegetables are sliced super thinly and applying strong acid makes them soggy and wilted quickly. 

Fresh Express Coleslaw Mix Recipe

This is a coleslaw prepared with only cabbage, so the flavour of dressing is all here. I always recommend tasting the dressing before adding it to the cabbage mixture. The amount is prepared for one person, so adjust when you prepare it for a whole group.

Also, after adding the dressing, the cabbage will start to release water. So, prepare it just before serving and also, if the dressing is prepared and the cabbage is sliced, it won’t take more than 2 minutes to prepare. 

Ingredients we Need:

½ Cup of Green Cabbage

3 Tbsp of Milk or Buttermilk

1 Tbsp of Apple Cider Vinegar

⅔ Cup of Mayonnaise

¼ Cup of Sugar

1/2 Tsp of Salt or to Taste

¼ Tsp of Freshly Ground Black Pepper or to Taste

Methods of Preparing Step by Step:

Step 1: In order to slice the cabbage thinly, you can use a spiral cutter or mandolin. Set the bowl aside.

Step 2: In a small mixing bowl, pour 3 tbsp of milk and 1 tbsp of apple cider vinegar. I basically don’t prefer using buttermilk for its strong flavour. Whisk together and let sit for 3 minutes.

Step 3: Now one by one, add 2/3 cups of mayonnaise, ¼ cup of sugar, ½ tsp of salt, and ¼ tsp of freshly ground black pepper. Whisk finely and taste the dressing. 

Step 4: Add the dressing to the cabbage. 

Serve immediately or chill in the refrigerator covering finely.
