Ingredients

  • 1/2 green cabbage, finely sliced
  • 1/2 red cabbage, thinly sliced
  • 1 small carrot, finely chopped
  • 1/2 cup of buttermilk
  • 2 ounces of yogurt
  • 2 ounces of fat-free mayonnaise
  • 1 tablespoon of pickle juice
  • 1 teaspoon of dry mustard
  • 1 tablespoon of chives, chopped
  • 1 teaspoon of Kosher salt, plus more as needed
  • 1/2 teaspoon of fresh ground black pepper

Directions: 

Step 1: To season the cabbage, generously add salt with sliced green cabbage and red cabbage. 

Step 2: Now transfer the seasoned cabbages to a colander, and let drain for 3 hours. 

Step 3: After 3 hours, rinse the seasoned cabbages thoroughly, and let it dry. 

Step 4: In a glass bowl, add buttermilk, yogurt, and mayonnaise. Whisk the ingredients finely. 

Step 5: In that bowl, pour 1 tablespoon of pickle juice, 1 teaspoon of dry mustard, and 1 tablespoon of dried chives. Sprinkle some salt and pepper. Mix with yogurt mixture entirely.

Step 6: Now, add the sliced cabbages and sliced carrots to the mayo-yogurt mixture. Toss evenly with spoon or hands. 

Salting cabbage for coleslaw is a genuine process. With this method, the dressing you have prepared for coleslaw with buttermilk, yogurt, mayo, pickle juice, etc. remain rich and flavorful. Anyways, the usage of various vegetables like red pepper, yellow pepper, carrot, etc. makes the coleslaw so colorful that you will just fall in love with it. To be honest, I was a little bit confused about the taste with so many vegetables, but I was completely wrong. You will know it by yourself. Let’s jump to the recipe along with the listed ingredients. 

Ingredients: 

  • 1 head green cabbage, sliced thinly
  • 1/4 head of red cabbage, sliced thinly
  • 3 spring onions, minced
  • 1/2 cup of yellow pepper, chopped
  • 1/2 cup of red pepper, finely chopped
  • 2 seeded jalapeno peppers
  • 1 carrot, thinly sliced
  • 2 tbsp. of mint
  • 2 tbsp. of cilantro
  • 1 ginger, sliced
  • 1/2 cup of rice wine vinegar
  • 1 tbsp. of soy sauce
  • 1 tbsp. of lemon juice
  • 2 tbsp. of sesame oil
  • 1/2 cup of peanut butter
  • 1/2 tsp. of black pepper
  • Salt as needed

Directions: 

Step 1: First of all, you need to salt cabbage for coleslaw.

Step 2: Then drain for 3 hours at least, and rinse finely. 

Step 3: Now, prepare the dressing with 1/2 cup of rice wine vinegar, 1 tbsp. of soy sauce, 1 tbsp. of lemon juice, 2 tbsp. of sesame oil, 1/2 cup of peanut butter, and 1/2 tsp. of ground black pepper. Whisk to combine the dressing finely. 

Step 4: In a large bowl, add the vegetables. Make sure the cabbages are fully dried out or it will be watery. 

Step 5: Pour the dressing into the vegetable mixture, and toss to combine. 

Your special looking perfect coleslaw with vegetables is ready to serve. Because of the peppers, the smell feels kind of spicy but with peanut butter, the taste becomes completely balanced. Surprise your guests with this unique type of coleslaw and enjoy.
