Directions:

Alike the ingredients, there are steps written separately for quick understanding. By following the methods, you can easily prepare this amazing traditional Cuban sandwich.

Preparing the pickle:

Step 1: Take a medium saucepan, and pour white wine vinegar, chopped dill, coriander seeds, and mustard seeds over high heat.

Step 2: Stir in the ingredients, and sprinkle 1/4 cup of sugar along with the kosher salt. Cook in high heat until the sugar, and salts are fully dissolved.

Step 3: Remove the pickling liquid from heat, and let it cool for 15 minutes at room temperature.

Step 4: In an airtight jar, put the sliced cucumbers. Then pour the pickling liquid over the cucumbers.

Step 5: Put the jar in the refrigerator for at least 2 hours. You can chill it overnight to infuse the flavor.

Preparing the sour orange glaze:

Step 1: In a small saucepan, pour 2 cups of orange juice, and 1/2 cup of lime juice over medium heat. Boil the juices for 20 minutes or until they reduce to 1/2 cup.

Step 2: Add 2 tbsp of honey, and 1 tablespoon of white wine vinegar, boiling for 5 minutes more.

Step 3: Season with kosher salt, and black pepper. Then remove from heat.

Transfer the orange glaze to a bowl, and let cool.

Preparing the pork:

Step 1: Set the oven for preheating to 425 degrees F.

Step 2: Generously season the pork with kosher salt, and freshly ground black pepper, using the steak rub.

Step 3: Let stand the seasoned pork for 15 minutes at room temperature.

Step 4: Take an oven-proof skillet, and pour 3 tbsp. of canola oil in it. When the oil begins to shimmer, add pork, and roast for 2 minutes, per side, or until foamed in the crust.

Step 5: With a cooking brush, evenly brush the pork with the sour orange glaze.

Step 6: Transferring the skillet to the oven, keep brushing the crusty pork for 10 minutes. Check the internal temperature with an instant read-meat thermometer. The result should be registered to 145 degrees F.

Step 7: Remove the pork from the oven, and transfer it to a cutting board. The pork is too hot now, so let sit for 10 minutes before slicing.

Preparing the Garlic Mayonnaise:

Step 1: In a small bowl, combine 3/4 cup mayonnaise, 2 tablespoons mustard, garlic paste, and chopped oregano.

Step 2: Whisk finely with a hand mixer for 10 minutes or until smooth.

Step 3: Season with salt and pepper. Let the flavor stand at room temperature for at least 15 minutes.

Preparing The Serrano Ham:

Step 1: Take a small saucepan, and heat the canola oil over medium (reaches 350 degrees F).

Step 2: Add one ham slice at a time, and cook for 1 minute. Repeat with other slices too.

Step 3: Drain off the extra moisture, and place them in a shallow plate.

For Serving:

Step 1: Evenly spread the garlic mayonnaise on both top and bottom parts. Then place sliced cheese on each part.

Step 2: Add pickles on the lower part of the Cuban bun. Also, place 5 slices of pork with 2 slices of ham.

Step 3: To make a bobby flay Cuban sandwich, stick the top of the bun with the bottom layer.

Step 4: Brush the external part of the buns with melted butter.

Step 5: Over low heat, warm a cast-iron pan, and put the sandwich, upside down. Place foil paper over the sandwich, and weigh them down with a heavy-cast iron pan, or heavy material.

Step 6: Cook the sandwich for 5 minutes each side or until the bread is crispy and turned into light brown color. Flip over, and repeat the procedure. By this time, the cheeses have perfectly melted.

Slice in halves before serving. Enjoy this amazing homemade Cuban sandwich with the recipe of Bobby Flay.
