Easy Baklava Cheesecake Recipe

To prepare this amazing baklava cake, you need to get phyllo dough at first. Then, gather other ingredients and prepare them quickly. With this amount, you can throw a traditional new year’s eve desserts party at home.

Ingredients we Need: 

  • 12 sheets of phyllo dough (approximately 14×9-in.)
  • 1/3 cup of butter, melted
  • 1 cup of finely chopped walnuts
  • 1/4 cup of sugar
  • 1/2 tsp of ground cinnamon
  • 1/4 tsp of ground nutmeg
  • 1/8 tsp of ground allspice
  • 2 packages (8 ounces each) of cream cheese, softened
  • 1 carton (8 ounces) of mascarpone cheese
  • 2/3 cup of honey
  • 1/4 cup of 2% milk
  • 3 tbsp of all-purpose flour
  • 3 large eggs, room temperature, lightly beaten

For Garnish:

  • 3 tbsp of light corn syrup
  • 3 fresh rosemary sprigs
  • 1/4 cup of sugar, divided
  • 1/2 cup of fresh or frozen cranberries, thawed and patted dry

How to Make Baklava with Cheese Step by Step:

Step 1: Start by preheating the oven at the temperature of 425 degrees F. 

Step 2: Place one sheet of phyllo dough in a 9-inch greased springform pan, finely placing the phyllo onto the bottom of the pan. 

Step 3: Brush the phyllo with butter, and keep layering the remaining phyllo sheets. Don’t forget to brush each layer.

Step 4: Take out a small mixing bowl, and mix up together 1 cup of chopped walnuts, ¼ cup of sugar, 1/2 tsp of ground cinnamon, ¼ tsp of ground nutmeg, and 1/8 tsp of ground allspice.

Step 5: Sprinkle some mixed spices over the phyllo, and bake for 5 minutes to 7 minutes or until the edges are lightly browned. 

Step 6: Cool it in the springform pan on a wired rack, reducing the heat at the temperature of 325 degrees F. 

Step 7: Take out a large bowl, and beat 8 ounces of cream cheese along with 8 ounces of mascarpone cheese on low speed of mixer until completely smooth. 

Step 8: Beat in 2/3 cup of honey, ¼ cup of milk, and 3 tbsp of all-purpose flour finely to mix up completely. 

Step 9: When done, add 3 eggs at a time and beat finely (keeping the speed low).

Step 10: Pouring the batter above the crust, return the baking pan to the oven

Step 11: Bake it for 50 to 60 minutes until the center is completely set. Remove from oven and let it cool 

Step 12: For garnish, pour 3 tbsp of light corn syrup in a microwave-safe bowl, and microwave uncovered for 10 seconds, just to make it warm. 

Step 13: Then, you need to brush the warm corn syrup lightly all around the rosemary. 

Step 14: Placing on waxed paper, sprinkle with almost 1 tbsp of sugar. You can reheat the remaining corn syrup, if needed, and toss the cranberries in the syrup. 

Step 15: Take a shallow plate, pour the remaining sugar, then add cranberries to toss. Let stand it for about 60 minutes. 

Just before serving or enjoying it, top the cheesecake with the prepared sugared rosemary and cranberries.
