How to Make Creamy Tomato Florentine Soup?

The taste of this zios tomato florentine soup is absolutely wonderful. With so many texture and rich flavour, this can be perfect for any party. Treat yourself and your family with something super delicious like this. The final touch up with heavy cream makes the soup more delicious. Here is the ingredient list and directions.

Ingredients we Need: 

3 Tbsp. of Butter

3 Tbsp. of Flour

1 Cup of Diced Onion (1/4-Inch Dice)

2 Tbsp. of Unsalted Butter

2 Tbsp. of Fresh Garlic

3 Chicken Bouillon Cubes

2 Cups of Boiling Water

1 (28 Ounce) Can of Crushed Tomatoes (3 Cups)

1 Tbsp of Ketchup

3⁄4 Cup of Vegetable Juice

1⁄2 Tbsp. of Dried Basil

2 Tbsp. of Dried Dill

1⁄4 Tsp of Hot Pepper Sauce

1⁄2 Tsp of Sugar

1⁄4 Tbsp. of Freshly Ground Black Pepper

2 Tbsp. of Dry White Wine

2 Cups of Heavy Cream or Whipped Cream

1⁄2 Cup of Fresh Spinach (Julianned to 1/8-Inch)

Methods of Preparing Italian Tomato Florentine Soup Step by Step:

Step 1: Bring out a heavy bottomed saucepan and heat up 3 tbsp of butter over medium heat. Melt for 1 minute or until it’s completely melted and foaming. 

Step 2: Whisk together 3 tbsp of flour stir until you get the flour in straw color. This will take about 3 minutes.

Step 3: After 3 minutes, remove from heat and transfer to a bowl. Set the bowl aside allowing to cool.

Step 4: In that saucepan, now add 2 tbsp. of butter and allow to melt. 

Step 5: Add 1 cup of diced onion and saute for 3 minutes to 5 minutes or until the onion gets golden brown in color. 

Step 6: Now, add 2tbsp. of fresh garlic and saute for 1 minute or 2 minute until fragrant. 

Step 7: Discard the mixture from heat and place in a food processor. Process until you get a smooth paste.

Step 8: Now, we will prepare the chicken base. In a bowl, add 2 cups of boiling water then add 3 chicken bouillon cubes. Allow to dissolve.

Step 9: Take out a small dutch oven and add 3 cups of crushes tomatoes, 1 tbsp of ketchup, and ¾ cup of vegetable juice along with the chicken base. Keep the heat over medium-low. 

Step 10: Now, add the pureed onion mixture, ½ tbsp. of dried basil, 2 tbsp of dried dill, ¼ tsp of hot pepper sauce, ½ tsp of sugar, ¼ tbsp of freshly ground black pepper and 2 tbsp of dry white wine. Simmer for 15 minutes to 20 minutes. 

Step 11: After 15 minutes, whish in the roux and again simmer for additional 30 minutes. 

Step 12: Lastly, add 2 cups of heavy cream and stir for 5 minutes. 

Remove from heat and sprinkle ½ cup of fresh spinach. Serve hot and enjoy your vegetable florentine soup.

Serve immediately or cool and refrigerate.
