Truffle Mac and Cheese Recipe

Making perfect mac n cheese is not a tough job, but if you are concerned about calories then, you need to give a little effort. If you have found this recipe, then no worries. Just follow the directions and start preparing the recipe. 

Ingredients We Need for Wegmans Macaroni and Cheese:

  • 1 box of Barilla Protein-Plus Elbows
  • 2 packages (32 oz) of Wegmans Organic Frozen Cauli crème 
  • 8 oz of Cabot Sharp Light Cheddar
  • 6 oz of Light Jarlsberg Swiss
  • 1.5 oz of Grated Parmesan cheese
  • 1/4 cup of Nonfat Greek Yogurt
  • 1 tbsp of Dijon Mustard
  • 1 tbsp of Hot sauce or more depending on preference of hot sauce
  • 1 tsp of Nutmeg
  • ¼ cup of greek yogurt
  • Kosher salt to taste
  • Freshly ground Pepper to taste

How to Make Truffle Mac and Cheese Step by Step:

Step 1: First of all, you need to boil the pasta. Boil it with salty water. 

Step 2: In another saucepan, melt the cauli crème as per the directions of the box. 

Step 3: At the time of cauli crème is cooking, you need to shred the 1.5 oz of parmesan cheese. Use block cheese only, not the shredded cheese. Because, shredded cheese doesn’t have additives to make it not clump which block cheese have. 

Step 4: When the cauli crème is done, transfer it to an another bowl, and stir in 1 tbsp of Dijon mustard. 

Step 5: Add up 1 tbsp of hot sauce or more, 1 tsp of nut meg, and the shredded cheese (almost ½ of the amount). 

Step 6: Mix up for 5 minutes, and add ¼ cup of greek yogurt.

Step 7: By this time, your pasta will get al dante, drain the cooked pasta, reserving almost ½ cup of pasta water. 

Step 8: Mix the cooked pasta with cheese sauce, coating or tossing finely. 

Step 9: If the sauce is too thick, then pour some of the reserved water to lessen the thickness of this sauce. 

Step 10: Sprinkle the remaining cheese into the wegmans super pasta. Heat the pasta into the oven.

 Remove from oven, serving immediately, and laugh as your children are having cauliflower unintentionally.
