This special meatloaf recipe is prepared by none other than Michael Symon, on The Chew. The classic southwestern flavor of meatloaf is completely got from this recipe. Usage of spices and roasted tomatillo sauce makes this recipe so special that you have prepared it again and again.

Ingredients We Need: 

I have listed the ingredients differently for meatloaf and roasted tomatillo sauce.

Michael Symon Meatloaf Ingredients: 

  • 2 pounds of ground pork
  • 3 large eggs
  • 2 cups of crushed tortilla chips
  • 3 tbsp. of Extra Virgin Olive Oil
  • 1 green onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeno, minced
  • 2 tbsp. of fresh parsley, chopped
  • 2 tbsp of chipotle chili in Adobo sauce
  • 1 tbsp of cumin
  • 1/2 tsp of Kosher Salt 
  • 1/4 tsp of freshly ground black pepper

Roasted Tomatillo Sauce Ingredients: 

  • 1 pound of Tomatillos, washed and peeled
  • 3 cloves of garlic
  • 1 chopped red onion
  • 1 tbsp. of chipotle in adobo sauce
  • 1 tsp of Kosher salt
  • 2 tbsp. of lime juice

Directions: 

For Roasted Tomatillo Sauce: 

Step 1: Firstly set the oven for preheating to 450 degrees F.

Step 2: Line a parchment paper at the bottom of the baking dish. 

Step 3: Spread tomatillos, 1/2 cup of chopped red onions, minced garlic cloves, etc. in the baking dish, and place for roasting for 15 minutes. By this time, they will be perfectly roasted.

Step 4: Now take out a blender, and pour chipotle sauce, Kosher salt, and lime juice. Blend for 5 minutes or until smooth.

Step 5: Transfer the sauce to a bowl, and your roasted tomatillo sauce is ready. 

For Meatloaf: 

Step 1: In a large frying pan, pour 3 tsp. of extra virgin olive oil over medium heat. 

Step 2: Add chopped onions, and saute after 5 minutes or until translucent. 

Step 3: One by one, add jalapenos, 1 tbsp. of cumin, minced garlic, and cook for 2 minutes. 

Step 4: In a glass bowl, add 2 pounds of ground pork, chipotle sauce, 3 eggs, tortilla chips, chopped onion, and fresh parsley. Combine them all finely using your hands. 

Step 5: You need to foam the meatloaf and place it on the top of lined parchment paper. 

Step 6: With a cooking brush, lightly brush tomatillo sauce on the top. And generously pour 1/2 of the sauce. 

Step 7: Now keep the baking dish in the oven at the temperature of 375 degrees F and bake for 45 minutes.

Step 8: After 45 minutes, remove from the oven. Brush with roasted tomatillo sauce, and cook for 15 minutes more.

Step 9: Check the internal temperature with an instant-read meat thermometer whether it is 160 degrees or not.

Step 10: When done, remove from the oven, and let the flavor set for at least 10 minutes. 

After that, your meatloaf is ready to serve. Pour some remaining tomatillo sauce on the side. 

Meatloaf Recipe with Garlic: 

The moist garlic-flavored meatloaf is always appetizing. With the garlic croutons, ketchup-honey sauce creates amazing flavor. The twist point is the usage of beef-turkey meats that means less fat than regular meatloaf. Let’s go for the recipe.

Ingredients:

  • 1 cup of garlic-flavored croutons
  • 1/2 teaspoon of garlic salt
  • 1/4 teaspoon of white pepper
  • 4 garlic cloves, minced
  • 1 red onion, finely chopped 
  • 1 red bell pepper, finely chopped
  • 2 tablespoons of olive oil
  • 2 large eggs, lightly beaten
  • 1 pound of lean ground beef
  • 1 pound of ground turkey (light or dark meat)
  • 1/2 cup of tomato ketchup
  • 2 tablespoons of honey
  • 1/2 teaspoon of dried thyme leaves

Directions: 

Step 1: Set the oven for preheating to 350 degrees F, and prepare a slits-cut broiler pan spraying with a nonstick cooking spray. 

Step 2: Take a plastic bag, and add croutons in it, crushing finely with a rolling pin. 

Step 3: Transfer the crumb croutons in a glass bowl. Add 1/2 teaspoon of garlic salt, and 1/4 teaspoon of white pepper. Mix the three ingredients well, and set aside.

Step 4: In a saucepan, add olive oil over medium-high heat. Then gradually add minced garlic, chopped red onion, and chopped bell pepper and saute for 10 minutes or until tender. 

 Step 5: Remove from heat, and add the vegetable mixture to the crouton crumbs.

Step 6: Pour beaten eggs to the bowl, and with a whisk mix the vegetables, crumbs, and eggs well. 

Step 7: After that, add ground beef and turkey. Then coat the mixture well with meats using hands. 

Step 8: Now, you need to foam the meat mixture into a meatloaf, and nestle it to the broiler pan. 

Step 9: In a small bowl, mix tomato ketchup, 2 tablespoons of honey, and dried thyme. 

Step 10: Pour the ketchup mixture over your meatloaf. 

Step 11. Place the baking pan in the preheated oven, and set the timer for 40 minutes.

Step 12: After 40 minutes, again brush the loaf with ketchup mixture, and bake for another 20 minutes. 

Step 13: By this time your meatloaf should be ready. To confirm check the internal temperature with an instant-read meat thermometer to 165 degrees F. 

After removing from the oven, cover it, and let stand for at least 10 minutes to set the flavor. Slice garlic meatloaf, and you can serve with roasted Parmesan garlic carrots. Among the side dishes, this one goes best with garlic flavored meatloaf.
