  • Four tablespoons of salted butter or a vegan alternative
  • One cup of chopped pecans 
  • One third cup of pine nuts
  • One fourth cup of flax seeds
  • Two-third cup of light brown sugar
  • Half a cup of honey
  • Two tablespoons of vanilla extract
  • Two cups of puffed rice cereal
  • Half a cup of dried cranberries or dry fruits of your choice
  • Half a teaspoon of salt

Method of Preparing Sunrise Energy Bars Step by Step:

Step 1: Line a baking plate with parchment paper and set preheat to the oven to 350° F or 175° C

Step 2: Speed the gluten free oats, pecan, flax seeds, pine nuts on the sheet and bake for 8 minutes, more or less. The fragrance of the ingredients will indicate if they’re ready. Take them out and move them to a bowl.

Step 3: Bring a saucepan over the stove and put it on medium heat. Pour the sugar, honey, butter and salt into the pan. Stir and let it simmer till the sugar melts and dissolves. The form will become light caramel in about 5 minutes.

Step 4: Remove the pan from the heat and as it cools down, mix the vanilla extract with it.

Step 5: Pour the caramel mixture into the bowl of nuts and oats. Mix well.

Step 7: Line a square baking pan (about 8 inches) with parchment paper. Leave about 2 inches of overhang on each side. Spread the cereal mixture onto the sheet and make an even layer. 

Step 8: Place another sheet of parchment paper over the mixture and press down to make sure the block is compressed. Let the dish rest for about 2 hours until firm. 

Step 9: Remove the top sheet and remove the bottom part of the now compressed block. Cut the bars into desirable pieces. The yield should be around 12 equal bars. 

Step 10: Store in glass jar or wrap them in plastic wraps and store in a cool place. Serve when needed.
