I’m not saying much! Just check out the recipe and prepare at home.

Publix Bread Ingredients:

  • 1 Tbsp. of active dry yeast
  • 5 Tbsp. of unsalted butter
  • ¾ cup of milk
  • ⅓ cup of prune plum filling
  • ⅓ cup of granulated sugar
  • 1 Tbsp. of molasses
  • 1 Tbsp. of honey
  • 2 large eggs, lightly beaten
  • ¼ cup of pecan meal
  • 2 cups of all-purpose flour
  • 2 cups of bread flour
  • ¼ cup of warm water, at the temperature of 105° to 110°F
  • 8 tsp of Vital Wheat Gluten
  • 1 tsp of Kosher salt
  • 1 ½ tsp of ground cinnamon
  • ⅓ cup of canned pumpkin
  • 2-3 Tbsp. of melted butter

Fruit & Nuts:

  • ¼ cup of golden raisins
  • ¼ cup of chopped dried apricots
  • ¼ cup of dried cherries
  • ¼ cup of chopped dried apples (not apple chips)
  • 1 cup of chopped walnuts
  • ¼ cup of cranberries
  • ¼ cup of dark raisins

How to Make Wheat Germ Publix Step by Step:

Step 1: First of all, you need to gather up all the dry fruits: raisins, apricots, cerries, apples, walnuts, cranberries in to a bowl. Then, soak them in hot water for 15 minutes to 20 minutes. This is a vital step. If you don’t do so, the dry fruits will absorb all the moisture from the yeast publix bread, leaving it completely dry.

Step 2: Take out a large mixing bowl, and dissolve 1 tbsp. of active dry yeast with ¼ cup of warm water.

Step 3: In another mixing bowl, sieve 2 cups of all-purpose flour and 2 cups of bread flour. Stir to combine and set aside.

Step 4: Bring a small saucepan over low heat, and melt 5 tbsp. of butter. When butter is completely melted, remove from heat and pour ¾ cup of milk. Now, add the milk-butter mixture to the yeast mixture.

Step 5: In that bowl, one by one, add 1/3 cup of canned pumpkin, 1/3 cup of prune plum filling, 1/3 cup of granulated sugar, 1 tbsp. of molasses, 1 tsp of kosher salt, 1 tbsp of honey, 1 ½ tso of ground cinnamon, ¼ cups of pecan meal, 2 large eggs, and 8 tsp of white gluten. Mix them finely with a whisk until completely combined.

Step 6: Sprinkle 3 cups of prepared flour mixture or whole 4 cups to form in a workable soft moist dough. The dough shouldn’t be too sticky.

Step 7: Time for kneading! Place the dough onto a lightly floured surface. Knead the dough using hands until smooth and completely elastic. This won’t take more than 10 minutes.

Step 8: Grease a bowl with oil and place the dough in the bowl. Cover the bowl with a plastic wrap, and let rise in a warm place for 1 hour or until the dough become double.

Step 9: By this time, drain the fruit off, pat them dry with a towel and set aside. Then grease two loaf pans (9″x 5″x 3″).

Step 10: Divide the dough in half, placing on the lightly floured surface. Sprinkle half of the fruit mixture on each loaf and knead finely.

Step 11: Shape the loaves and place them into the greased baking pan. Brush with melted butter, then cover again to rise for 1 hour.

Step 12: Meanwhile, set the oven for preheating at the temperature of 375 degrees F.

Step 13: After 1 hour, uncover and bake in the oven for 45 minutes. Insert an instant read candy thermometer. If it results 200 degrees F at the center then, the bread is done with fine aroma and light golden crust.

Remove from the oven and let it cool in the wire rack.

Conclusion:

Here in this special publix sourdough bread, there is nothing but ultimate taste. As per your liking, omit or add up fruit section. Though dried cherry isn’t original to this publix bread, but I use it. So, add up something new in your food experience and enjoy!
