3/4 Pound Bite Sized Chicken Breasts or Thighs, Boneless and Skinless

1 1/2 Teaspoons Oregano, Dried and Crushed

1 Teaspoon Cumin Powder

1/2 Teaspoon Regular Salt

1/4 Teaspoon Ground Black Pepper

2 Tablespoons Olive Oil

1 Chopped Onion, Small Size

1/2 Chopped Bell Pepper, Green

1 Tablespoon Canned or Fresh JalapeñO Pepper, Chopped

12 Ounces Tomato Paste

1 Cup Frozen Tender Soybeans

4 Cloves of Garlic, Milled

30 Ounces Canned Kidney Beans, Drained and Washed under Water

2 1/2 Cups Chicken Broth, Low Fat and Low Sodium One

6 Ounces Grated Cheese, Low Fat Pepper Jack One (if Desired)

Method of preparing Homemade Panera Bread Chicken Chili Step by Step:

Step 1:

Grill your chicken breasts and pull them using a fork. Keep them ready for later use. You can substitute chicken thighs or breasts with ground turkey too.

Step 2:

Take a big heavy pot. Heat the pot on low to medium flame. Pour olive oil and put chopped onion just after the oil turns hot. Turn the onion light brown.

Put the minced garlic. Put the chopped green bell pepper. Stir well. Cook until the veggies are soft.

Step 3:

Put the grilled chicken on the pan. You can use some turkey instead. Cook for another 5 minutes.

Now pour tomato paste, chicken broth, black pepper, cumin powder, bean and the tender soybean altogether.  Cook the mixer on medium flame. Bring it to a big boil.

Throw spices to get more flavors. Put some salt according to your taste. Cook on low to medium high heat. Cover the pot and lower the heat. Stir from the bottom to upward.

Step 4:

Keep boiling the mixer for more 10 minutes. Mix the ingredients well. Smash the beans and veggies to get blended with the tangy and flavorful tomato paste and chicken broth. Simmer it for 20 minutes. The chili will start to thicken.

Don’t dry it up rather keep it soft and saucy. If require pour some chicken broth to balance the consistency. Once you find all the ingredients get properly cooked and absorbed the flavor of the spices, turn down the heat and wait for few more minutes.

Step 5: 

Adjust the salt and seasonings at this final stage. Top with grated cheese if preferred. Enjoy hot chili with a corn bread or any homemade bread, and a bowl of salad as a side.
