Now, pour 1/3 cup of batter onto the saucepan. Tilt the pan a bit to even out the batter. Remember, we don’t want too thick. Cook for about 2 minutes and flip it.

Lemon Pancakes with Condensed Milk

This condensed milk pancakes recipe is actually a lemon pancake recipe. Imagine a stack of lemon pancakes drizzled with cinnamon condensed milk; yes, that is what I am about to share with you. This recipe is very versatile that you can even go off the road and experiment on your own. This also can be the pancakes recipe without buttermilk. You can simply use almond milk instead of that. Without any delay, let’s jump into this delicious pancake recipe.

Ingredients:

For Lemon Pancakes:

  • 1 ½ cup of all-purpose flour
  • 3 tsp of baking powder
  • 1/4 cup of condensed milk
  • 1 cup of milk
  • 1 egg
  • 3 tbsp of unsalted butter, melted
  • 3 tbsp of lemon zest 
  • 2 tsp of vanilla extract
  • pinch of kosher

For Cinnamon Condensed Milk Syrup

  • 1/2 cup of condensed milk
  • milk
  • 1/4 tsp of cinnamon

Methods of Preparing Step by Step:

For Lemon Pancakes:

Step 1:

Take a large bowl. Add 1 cup of milk, 1/4 cup of condensed milk, 3 tbsp of melted butter, 2 tsp of vanilla, 3 tsp of lemon zest, 1 egg, and mix well. Don’t have to be super smooth, and absolutely don’t worry about the small bits.

Step 2:

Take a small bowl. Add 1 ½ cup of flour, 3 tsp of baking powder, a pinch of salt, and combine well. Now, add the flour mixture to the liquid mixture by using a sieve. Remember one thing here, don’t overmix.

You might not get a fluffy pancake. A smooth batter will give off a nice and chewy pancake, which you desire the most. Max 8-10 times is enough.

Step 3:

Get to the stove now. Set it to medium-low settings. Add a tbsp of oil to a saucepan. Now, add a bit of butter to melt.

Step 4:

Add 1/4 cup of batter into the saucepan. Here, use the scoop to shape up and spread the batter—the thinner, the better for me. Let the batter cook for around 2 minutes or so until the bubbles form.

Flip it to the other side. Cook again for 1-2 minutes. Repeat the steps for other batches. Don’t let the pan dry up. Add 1 tbsp of oil and butter if necessary. Set aside the pancakes.

For the Cinnamon Condensed Milk Syrup

Step 5:

Take a small bowl. Add 1/2 cup of condensed milk and 1 tsp of milk at a tome. Mix till your desired thickness. Remember not to use more than 2 tbsp of milk. Almond milk can be an excellent pancake milk substitute.

Step 6:

Add in 1/4 tsp of cinnamon and give it a good mix.

Step 7:

Assemble the pancakes and make a mountain. Drizzle the pancakes with syrup and enjoy to the fullest.
