Old Fashioned Nut Roll Recipe

Ingredients

1/2 cup of warm, 2% milk (110° to 115°)

1/4 cup of brown sugar plus 2 tbsp extra

1 cup of butter or margarine, softened

3 large eggs, room temperature, lightly beaten

3/4 tsp of Kosher salt

1 cup of sour cream

½ ounce of active dry yeast

6 to 6-1/2 cups of all-purpose flour, you can use self-rising flour instead

 For kolache nut roll Filling:

1/2 Cup of Butter or Margarine, Cubed

1 Large Egg

1/2 Tsp of Ground Cinnamon

4 1/2 Cups of Ground Walnuts

1 Large Apple, Peeled and Grated

1-1/4 Cups of Granuated Sugar

For icing:

2 cups of confectioners’ sugar

3 tbsp of milk

How to Make Nut Rolls? (Step by Step)

Step 1: Take out a small bowl and add ½ ounce of active dry yeast. Then pour ½ cup of warm milk. Let it sit for 30 minutes.

Step 2: In a large bowl, add 1 cup of soften butter, ¾ tsp of kosher salt, ¼ cup of brown sugar, 1 cup of sour cream and 3 eggs. With a whisk beat them finely. 

Step 3: When done, gradually add 3 cups of all-purpose flour. With a beater, beat them altogether for 3 minutes. 

Step 4: Now, add the dry yeast mixture and finally beat for 5 minutes or until the dough is perfectly shaped. If it feels sticky, no worries! The dough is better soft and sticky to have the great flavour. 

Step 5: Turn the sticky dough onto a floured surface and keep kneading until smooth out. In this phase the dough will be elastic. 

Step 6: Now, grease a glass bowl and place the dough there to rest until doubled. It takes usually 1 hour but depending on temperature, it may vary. 

Step 7: For filling, take out a large saucepan, adding 1 1/4 cups of granulated sugar, ½ cup of butter, egg and ½ tsp of cinnamon powder. 

Step 8: Cook them for 7 minutes over medium heat or until the filling is enough thick. 

Step 9: Remove from heat, then fold in 4 ½ cups of ground walnut and grated apple.

Step 10: Meanwhile, onto a lightly floured surface, divide the dough into 4 portions. Spreading the filling equally, roll them up like jelly-roll style. 

Step 11: Grease a baking sheet and place them. Then, turn on the oven at the temperature of 350 degrees F and set the timer for 40 minutes. 

Step 12: By this time, the polish nut rolls will turn into nice light brown color. Remove from oven and let them cool in a wire rack.

Step 13: Prepare the icing by combining 2 cups of confectioners’ sugar along with 3 tbsp of milk. Drizzle on the top.
