Thunder cake recipe has recently got very popular on Pinterest. So, like others, I wanted to try this recipe. But it’s ingredient difference made me doubtful about preparing it. But one day, I saw my daughter asking for a piece of thunder cake that was selling at our near-by departmental store. So, without any ado, I started preparing the cake. To my surprise, it went amazing. I have finely listed all the necessary ingredients along with crystal clear directions. 

Chocolate Thunder Cake Recipe

Thunder cake is also called the storm cake because of its taste and ingredients. Cake recipes without milk seem impossible, but this cake is prepared with no milk but tomato puree and cold water. Isn’t it tempting? Let’s have a look. 

Ingredients we Need: 

  • 1 cup of shortening
  • 1 ¾ cups of brown sugar
  • 3 large eggs, yolk and egg white separated
  • 1 tsp of vanilla extract 
  • 1/3 cup of tomato puree
  • ½ cup of cocoa powder
  • 1 cup of cold water 
  • 2 ½ cups of cake flour
  • 1 ½ tsp of baking soda
  • 1 tsp of baking powder
  • 1 pinch of salt

For Garnish: 

  • Chocolate buttercream icing 
  • Fresh strawberries

How to Make Thunder Cake Step by Step:

Step 1: Set the oven to preheat at the temperature of 350 degrees F. 

Step 2: Grease with oil, and flour two 8 ½ inch cake pans generously. 

Step 3: In a medium mixing bowl, cream together 1 cup of shortening and 1 ¾ cup of brown sugar. 

Step 4: Using a whisk or fork beat the egg yolks finely along with 1 tsp of vanilla extract. 

Step 5: In another bowl, pour 1 cup of cold water with 1/3 cup of tomato puree. 

Step 6: In a bowl to electric beater, beat the egg white until they are fluffy and stiff. 

Step 7: Now, fold the egg white into the tomato puree mixture along with vanilla and yolk mixture. 

Step 8: Take out a large bowl, and sieve 2 ½ cup of cake flour, 1 ½ tsp of baking soda, 1 tsp of baking powder, and a pint of salt. Sift them all together. 

Step 9: Then mix the dry ingredients mixture into the wet mixture. 

Step 10: Now, pour the batter evenly into both of the cake pans. 

Step 11: Place them evenly in the preheated oven

Step 12: Bake for 35 minutes to 40 minutes or until the testing toothpick inserted comes out clean. 

Step 13: After Removing from the oven, let the cakes cool on the wire rack. 

Step 14: When completely cool, frost with chocolate butter cream icing. 

Before serving, top with fresh strawberries.
