Southern Comfort Vanilla Spice Eggnog Recipe

INGREDIENTS:

  1. Egg whites (4)
  2. Milk (full 2 cups)
  3. Spiced Rum (3 ounces) (one can also use bourbon or whiskey instead of Rum)
  4. Nutmeg (1 teaspoon)
  5. Cream (full 1 cup)
  6. Egg yolks (4 or 5)
  7. Seeds of vanilla bean (1)
  8. Sugar (1/3 cup + 1 tablespoon)

DIRECTIONS:

I found a hand mixer as a helping hand to work best. One can also use a stand mixer.

Step 1:

First of all, put egg yolks in a bowl. Stir up until they lighten in color. Bit by bit, add the sugar (1/3 cup) and continue to blend until it is fully softened. 

Step 2:

Add the cream, milk, vanilla bean seeds, Rum, and nutmeg all together. Mix them well. 

Step 3:

Take a clean bowl and place the egg whites in the bowl. Beat to soft peaks. Gradually add the one tablespoon of sugar in the mix and beat up until hard peaks form.

Step 4:

Further, beat the egg whites and also mix it into the blend. Stir to combine before serving your delicious recipe (separate slightly).

For Baked version:

You should take sterilized egg whites to have a better taste of this recipe.

For this of the eggnog spiced version, you have to follow some general steps. Here again, take a bowl and beat the egg yolks. Continue to blend till they lighten in color. Follow the same procedure with the sugar as we have done with the previous version. And then set aside.

Take a medium saucepan. Combine heavy cream, vanilla bean seeds, the milk, and nutmeg in the saucepan and bring them just to boil at over high heat. Blend the mixture according to the step by step. Remove the saucepan from heat and keep it beside. Progressively temper the hot mixture into the egg and sugar mix. Reappear everything to the pan and cook until the mix reaches 160 degrees F. Once the mixture reaches the required temperature, remove the pan from the heat. Mix them in the Rum. Further, pour into a medium mixing pan. Set the final mixture in the refrigerator and chill.

Now, stir the sterilized egg whites. With the mixer running step by step, add one tablespoon of sugar and beat up until inflexible peaks form. And now, comes the final step, whisk the fresh egg whites smoothly into the chilled mixture.
