Red Lobster Cod Recipes

Red Lobster is a food chain company that originated from Florida. Their one of the popular dishes are the Nantucket Baked Cod. As the menu describes, you will get some tomato slices over the fillets and might get some weight from the packed butter and cheese. It can be served with veggies or even steamed rice; you fancy. So, without any delay, let’s get into some red lobster cod recipes.

Red Lobster Nantucket Baked Cod 

The dishes of Red Lobster are quite packed with butter. Frankly, this one is a bit slimmed down from the original recipe, but overall, it still got the subtle flavor as the original. It is also as simple as that. What you must do is, pack the cod with melted butter, as the Red Lobster does, some tomato slices, and sprinkle some parmesan at the end. There, you get it. Now, let’s get a brief on this red lobster nantucket baked cod recipe.

Ingredients:

  • 1 and 1/2 lbs of fresh cod fillets
  • 1 tbsp of butter, melted
  • 1/2 lemon’s juice
  • 1 tsp of lemon zest
  • 2 tomatoes, sliced
  • 2 tbsp of freshly grated parmesan
  • 1/4 tsp of kosher salt
  • 1/4 tsp of paprika
  • pinch of freshly grated black pepper
  • pinch of cayenne pepper

Directions for preparation step by step:

Step 1: Start with the oven. Preheat it to 425F. 

Step 2: Get a small bowl. Add 1/4 tsp of kosher salt, 1/4 tsp of paprika, a pinch of freshly grated black pepper, and a pinch of cayenne pepper. Combine them well and set them aside.

Step 3: Get a baking dish. Place the fresh fillets onto them. Now, brush the fillets with butter. 

Step 4: Sprinkle the spice mix over the fillets and coat them well.

Step 5: Now, add the juices of 1/2 lemon and 1 tsp of lemon zest over the fillets.

Step 6: Get the tomatoes. Slice them into thin layers. After that, layer the 2-3 slices on each fillet.

Step 7: Get the grated parmesan cheeses. Sprinkle the cheese over the fillets. Off to the oven now.

Step 8: Place the dish into the oven. Bake the fillets for 8 minutes. After that, take them off the oven. Place the dish into the broiler. Don’t know if the red lobster broiled fish or not, it turned out great. 

Step 9: Cook for around 6-8 minutes in the broiler. The cheese should start melting down by now. Tomatoes gonna burn now. Take the dish off the broiler.

Best served with salad. Baked potatoes work as well. Enjoy!

Roasted Cod with Chorizo

Now, this one here is not your typical nantucket cod recipe. This one is an off-grid recipe that I tried, and it really is a good one and thought this might be a good idea to load more than just a typical Red Lobster recipe with cod. I hope you guys will enjoy it. Let’s get into it.

Ingredients:

  • 4 fresh cod loins
  • 2 tbsp of all-purpose flour
  • 1/2 cup of chorizo, finely diced
  • 3/4 cup of fennel, finely diced 
  • 3/4 cup of turnip, finely diced
  • 1/2 cup of dried tomatoes
  • 1 cup of couscous
  • 2 red peppers
  • 1/2 cup of pesto, without basil
  • 1 cup of lobster bisque
  • 1/4 cup of cream
  • 1/2 cup of milk

Directions for preparation step by step:

Step 1: Let’s get the bell peppers at first. Turn on the stove and caramelize them on direct flame. Take them off after blackened all over peppers on an open flame on the hob until blackened all over. 

Step 2: Get plastic wrappers and wrap the bell peppers up for around 5 minutes. After that, take it off and remove the skin. Cut the peppers into square-sized.

Step 3: Get a saucepan. Heat up 1 tbsp of olive oil or any other cooking oil that is available. Now, add 1/2 cup of chorizo and cook until most of the juices come out.

Step 4: Now, add in 1 cup of lobster bisque, 1/4 cup of cream, and 1/2 cup of milk. Stir them well.

Step 5: After that, add in 3/4 cup of finely diced turnip and 3/4 cup of fennel, and a lump of butter if available. Cook for around 5 minutes.

Step 6: Get a pot and boil water. Add in 1 cup of couscous and boil for around 5 minutes. After that, drain it. 

Step 7: Get to the tomatoes. Chop them finely and stir in the chorizo mix.

Step 8: Get a plate and add 2 tbsp of all-purpose flour. Coat one side of the cod loins. My loins are of nantucket cod.

Step 9: Get a saucepan. Add an adequate amount of oil to fry the loins. Fry the coated part for around 5 minutes. Now, flip them over and cook for 1 more minute. Get those off the pan.

Step 10: Blend 1 cup of lobster bisque with a stick blender.

Step 11: Let’s arrange them now. Get plates. Make a circle with the boiled couscous. Now, place the fish on top of that and drizzle around the brisque. Arrange the red peppers and drizzle the pesto. Enjoy!

Red Cod with Cannelinni

There are quite some recipes of cod to get against the Red Lobster. There is this one that I found might be one of the best recipes for cod. Here, the cod is served with cannellini beans. For me, it seemed that the beans infused the cod’s flavor. Without any delay, let’s get into this.

Ingredients:

  • 8 oz of red cod fillets
  • 14 oz of tomatoes, diced
  • 1/2 large-sized onion, thinly sliced
  • 2 tsp of capers
  • 12 olives, pitted and quartered
  • 1 clove of garlic, minced
  • 7 oz of cannellini beans, rinsed and drained
  • 1/2 tsp of kosher salt, to taste
  • 1/4 tsp of freshly ground black pepper
  • 1 tbsp of olive oil

Directions for preparation step by step:

Step 1: Get a baking pan. Spread half tbsp of olive oil and spread over the pan.

Step 2: Place the fillets on the pan. Now, sprinkle them with kosher salt and freshly ground pepper.

Step 3: After that, place the diced tomatoes and onions around the pan and over the fillets.

Step 4: Spread the minced garlic, beans, olives, and capers over the fillets. After that, drizzle over the remaining olive oil on top.

Step 5: Off to the oven. Bake for 30 minutes on 350F. Serve them hot and enjoy! Compare with the red lobster fish dish. I felt better, frankly.

Conclusion

Red Lobster getting the Nantucket cod perfected from time to time. Even though packed up with butter seals up the real flavor. Don’t neglect the branch recipes here. Even they are competitive. Finally, don’t mix up a lobster with a cod. My neighbor had a tough time realizing where he was wrong. See if you can find Blue Cod lobster or something. Let me know.
