Grandmothers Summer Sausage Recipe

Ever since I have learnt this recipe, I never bought sausage! One of my friends suggested that I share this grandmothers summer sausage recipe with you guys so that you can learn this amazing recipe. The name of this recipe is so relatable that I always feel nostalgic whenever I prepare this. When I was so young, I remember my great granny used to make sausages. I loved that smoky smell, though I don’t remember much of that. I have heard from mom that her family used to run a small business. Anyways! Let’s see the recipe. 

Old Fashioned Summer Sausage Recipe

Here is the list of all the ingredients with proper measurements along with the crystal clear directions. Also, I have mentioned the substitute of possible equipment and ingredients too.

Ingredients in Summer Sausage

  • 2 lbs of lean ground beef
  • 3/4 cup of water
  • 2 Tbsp of meat curing salt blend, or you can use 4 tbsp of celery powder
  • 2 Tbsp of liquid smoke
  • 1 tsp of onion powder
  • 1 Tbsp of mustard seed
  • 1/4 tsp of ground nutmeg
  • 1/3 tsp of ground cloves
  • 1/2 tsp of freshly ground black pepper
  • 1 Tbsp of brown sugar
  • 4 to 6 tsp of cracked black pepper (Don’t miss this) 

How to Make Homemade Summer Sausage Step by Step:

Step 1: Take out a large mixing bowl, and now one by one add these ingredients: 2 tbsp of lean ground beef, 2 tbsp of meat curing salt blend or 4 tbsp of celery powder, 1 tsp of onion powder, ¼ tsp of ground nutmeg, 1 tbsp of mustard seed, and 6 tsp of crack black pepper. 

Step 2: Using hands, blend all the ingredients finely. There is no shortcut preparing this homemade summer sausage. 

Step 3: After blending or kneading for 5 minutes, sprinkle 1 tsp of brown sugar, 2 tsp of liquid smoke, ¾ cup of water, and ½ tsp of freshly ground black pepper. Continue blending for 10 more minutes, to make sure it is moist enough to form into any shape. 

Step 4: Now, divide the mixture into 3 logs. If desired, coat the shaped logs with cracked peppers. Well, this is absolutely optional. But I do it because it looked good further. Besides, it tastes good enough. 

Step 5: Now, finely wrap the prepared logs in Saran wrap. If not available, then use Beeswax wraps. 

Step 6: The, place them in the refrigerator to chill for 24 hours, not less than that!

Step 7: After 1 day, remove the saran wrap, place the sausage logs on the baking rack. 

Step 8: Set the oven temperature at 300 degrees F for 1 hour 30 minutes. 

Step 9: Turn off the oven, and let cool. Again, rewrap in aluminium foil paper, and chill in the refrigerator. 

You will notice the sausage will be a nice red color. This is how you can easily make your summer sausage without any problem at all.
