  • Two and a half cups of all-purpose flour
  • Half a teaspoon of instant yeast
  • One cup of warm water

For the dough:

Two and a half cups of all-purpose flour

Two teaspoons of kosher salt

One tablespoon of sugar

One teaspoon of instant yeast

One tablespoon of olive oil

Three fourth of a cup of warm water

Half a cup of Cornmeal for dusting

One egg

Method of Preparing the Gonnella Rolls Step by Step:

Step 1: Firstly, you have to make the biga or starter. In a medium-sized bowl, mix the flour and instant yeast and gradually mix with the warm water. Make a rough dough but do not knead.

Step 2: Flour your workstation and take the rough dough and knead lightly for a few minutes for it to become smooth. Move it to a lightly oiled bowl, cover with a towel and let it rest for about 3 hours at room temperature.

Step 3: Set it in the freezer overnight and let it chill. When you take it out in the morning, make sure you let the rough dough return to room temperature. So, keep it aside for an hour after you take it out of the fridge. Cut into small pieces.

Step 4: In a big bowl, mix the flour, sugar, salt, yeast. Add the cut-up pieces of the biga into the dry mixture. Mix and knead together. Add three fourth of a cup of warm water and olive oil. Mix and knead till it forms a smooth dough. The dough must stay elastic and barely sticky.

Step 5: Lightly oil a bowl and let the dough rest in it for about a couple of hours. Let it rise until it doubles. Transfer it to a floured surface of your workstation.

Step 6: Divide it into equal halves of two. Then cut those two halves into three parts each. Shape the parts. Sprinkle it with cornmeal powder and cover with plastic wraps so the rolls rise some more.

Step 7: Fill a metal pan with water and place it in the lower rack of the oven and set the oven to preheat at 450˚F. While it is preheating, beat an egg with a teaspoon of water to make an egg wash.

Step 8: Brush the rolls with the egg wash. Slightly slice on the dough tops with a sharp knife. Place them on top of a baking sheet on the baking pan. Bake for 20-25 minutes. Keep an eye so it doesn’t burn. The tops of the Italian beef bread should turn into a beautiful shade of golden brown.

Step 9: Take it out of the oven. Let cool on a wire rack. Serve and enjoy.

Conclusion

It takes almost two days to fully be ready but the end result is totally worth it. The method is not that difficult to follow either. The time it takes to let the dough rise is so that you can enjoy the soft and crunchy texture of the delicious bread.
