Chomp Chomp Nation Burger Recipe:

This special burger recipe is especially for restaurant use. With all these preparations lemongrass paste, lemongrass vinaigrette, specially made tiger slaw takes a lot of time and patience. But each bite worth this effort. Let’s prepare this special chomp burger.

Ingredient List: 

For your better understanding, I have separated the ingredients. When I prepared my burger, the biggest trouble was measurements. After preparing successfully, I have written the ingredients separately. This will be a great help while arranging the ingredients.  

Lemongrass Paste:

  • 1/2 cup of peeled and chopped fresh ginger 
  • 6 cloves garlic, peeled and smashed  
  • 6 lime leaves 
  • 4 medium shallots, peeled and sliced  
  • 3 stalks of lemongrass, white part only, softened 

Lemongrass Vinaigrette: 

  • 2 cups of seasoned rice wine vinegar  
  • 1 1/2 cups of grapeseed oil  
  • 1 teaspoon of Dijon mustard  
  • 1/2 teaspoon of chili sauce  
  • 1/4 teaspoon of Chinese white pepper  
  • 3 lime leaves

Tiger Slaw: 

  • 2 cups of green cabbage, shredded 
  • 1 cup of red cabbage, shredded  
  • 1 cup of carrot, shredded  
  • 1 cup of daikon, shredded  
  • 1 cup of apple, shredded  
  • 1 cup of mango, shredded 

Crab Burgers: 

  • 5 pounds of lump crab meat  
  • 5 pounds of crab leg meat 
  • 3 cups of cooked rice  
  • 4 cups of panko, 
  • 3 cups of chili sauce  
  • 1/2 cup of mayonnaise  
  • 4 tablespoons of sambal 
  • 3 cups of the egg mix  
  • 2 cups of sliced green onions 
  • 24 brioche buns 

Directions Step by Step: 

Preparing the lemongrass paste:

Step 1: Take a blender or food processor. 

Step 2: Add 1/2 cup of ginger, 6 cloves of garlic, 6 lime leaves, 4 sliced shallots, 3 stalks of lemongrass in a food processor. Process for 2/3 minutes or until smooth puree. 

Preparing the Lemongrass Vinaigrette: 

Step 1: Place 2 cups of seasoned rice wine vinegar, 1 1/2 cup of grapeseed oil, 2 tablespoons of lemongrass paste, 1 teaspoon of Dijon mustard, 1/2 teaspoon of chili sauce, 1/4 teaspoon of Chinese white pepper, and 3 lime leaves into the blender and blend for 5 minutes or until emulsified. 

Step 2: Transfer the puree in a glass bowl and set aside. 

Preparing the Tiger slaw: 

Step 1: Take a large glass bowl. 

Step 2: Add 2 cups of shredded green cabbage, 1 cup of shredded red cabbage, 1 cup of shredded carrots, 1 cup of shredded daikon, 1 cup of shredded apple, and 1 cup of shredded mango. 

Step 3: Mix the ingredients well, then toss with 3 tablespoons of vinaigrette. 

Preparing the Crab Burgers: 

Step 1: Drain 5 pounds of lump crab meat, 5 pounds of crab leg meat. 

Step 2: Take a large bowl and add the rice. Place 3 cups of cooked rice and 4 cups of panko, folding in. 

Step 3: Mix in 3 cups of chili sauce, 1/2 cup of mayonnaise, 4 tablespoons of sambal, 3 cups of egg mix, and 1 cup of lemongrass paste. 

Step 4: Now add the crab into the bowl with sliced green onions, combine all using hands for best. 

Step 5: Shape the ingredients into 24 numbers of patties. 

Step 6: Simply degrade the patties into the additional panko, ensuring the patty base. 

Step 7: Take out a fryer and set the temperature at 350 degrees F. 

As per your fryer size, cook the patties. Cook each side for 3/4 minutes or until crusty and golden brown.

Step 8: Toast the brioche buns. 

Step 9: To serve, place the patty on the bottom bum. Topping with chili sauce and tiger slaw, cover with the top bun which is called ” crown”.
