Step 3: In a mixing dish, combine the salsa and garlic. Top each chicken breast with 1/4 cup of the salsa mixture and a squeeze of lime juice.

One Jar of Picante Sauce

Two Tablespoons of Chopped Fresh Cilantro

Two Tablespoons of Packed Brown Sugar

One Tablespoon of Grated Fresh Ginger Root

One Tablespoon of Cooking Sherry

One Teaspoon of Soy Sauce

Two Cups of Hot Cooked Long Grain White Rice or Jasmine Rice

Method of Preparing the Cha Cha Chicken Step by Step:

Step 1: Preheat the oven to 350 degrees Fahrenheit. Aluminum foil should be used to line a 3-quart shallow baking pan. In a pan, layer the chicken, onions, and pineapple.

Make sure the chicken breasts are on the bottom layer. So, first, put the chicken breasts down on the bottom of the pan, them layer with onions and pineapples.

Step 2: In a medium mixing bowl, combine the picante sauce, cilantro, brown sugar, ginger root, sherry, and soy sauce. Over the pineapple, pour the picante sauce mixture. Cover the pan with a lid.

Step 3: Bake for 45 minutes, or until chicken is thoroughly done. Serve the rice with the chicken and sauce. If desired, top with more cilantro. 

Note: Many people may not like pineapple in their savory food which is totally understandable. We all have our own preferences regarding food. Some of us are picky about pineapples, so instead of pineapples, you can add carrots or celery.
