Bobby Flay Fresh Pasta Recipe: 

When you want to enjoy all-homemade pasta, the first name that comes out in mind is Bobby Flay. As he has recently revealed his secret recipe, I couldn’t but try this at home. Here is the written recipe.

Ingredients: 

As you need a lot of ingredients to prepare this tangy meaty recipe. They are perfectly categorized and well-organized for separated parts. Here is the list.

For Pasta Dough:

  • 2 cups of all-purpose flour (1/2 cup more for dusting) 
  • 4 egg yolks
  • 3 egg white

For Meat:

  • 2 tbsp. of olive oil
  • 8 ounces of bacon, diced evenly
  • 11/2 pounds of ground chuck 
  • 1/2 pound of ground pork 
  • 1 tsp of ground dried fennel
  • 1/4 tsp of Calabrian chili flakes
  • Kosher salt, as per taste 
  • Freshly ground black pepper, as per taste

For Bolognese Sauce:

  • 2 tsp of olive oil
  • 1/4 cup of finely diced celery
  • 1/4 cup of finely diced fennel
  • 2 small red onion, finely diced
  • 1/2 medium carrot, finely diced
  • 4 cloves garlic, finely grated
  • 2 tbsp. of tomato paste
  • 1 tsp ground dried fennel.
  • 1 cup of rose wine
  • 28-ounce of tomatoes
  • 6 baby eggplant, diced finely
  • 2 cups of chicken stock
  • Kosher salt, to taste
  • 1/4 tsp of ground black pepper
  • 1/4 cup chopped parsley leaves, plus more for garnish
  • 1 tbsp. of finely chopped fresh oregano

For Garlic Bread:

  • 1 loaf of ciabatta, sliced lengthwise
  •  8 tbsp. (1 stick approximate) of unsalted butter, at room temperature
  • 2 cloves garlic, smashed to a paste
  • Kosher salt, as per taste
  • Freshly ground black pepper, as per taste
  • 1/4 cup of Creme fraiche, for serving
  • Freshly grated Parmigiano-Reggiano, for serving

Bobby Flay Pasta Dough Recipe Step by Step: 

Step 1: Firstly, combine the 2 cups of flour, 3 egg white, and 4 egg yolk in a dough maker. Pulse all ingredients until they come together in a dough form.

Step 2: Transfer the dough to a wooden board, dusting generously with flour. 

Step 3: Knead the dough gently until smooth and comes in perfect shape. 

Step 4: Wrap the dough with a plastic wrap. Place the dough in a refrigerator for at least 30 minutes. You can chill the dough up to 24 hours. 

Step 5: After that, split the dough in around 4 pieces. Give each piece dough into a rectangular shape using hands. 

Step 6: Dusting it lightly, pass through on the pasta machine (into the widest settings). 

Step 7: Don’t fold the dough, and pass through the following setting. Continue reducing the space after each pass, and keep dusting lightly both sides of the pasta. Repeat the process until the pieces become 1/16-inch thick with 3-inch wide.

Step 8: Cut them into 11 inches lengthwise. Repeat the same procedure with the remaining dough. 

Here the pasta dough is ready. Set aside, and go for the next stage. 

Bobby Flay Meat Recipe Step by Step:

Step 1: Take a large frying pan, and heat the olive oil over medium heat. 

Step 2: Add 8 ounces of bacon and cook for 10 minutes or until the bacon is crispy enough. 

Step 3: Line a shallow plate with paper towels and transfer the bacon using a slotted spoon. 

Step 4: Increasing the heat to high, place the 11/2 cup of the ground chuck, 1/2 cup of ground pork to the frying pan. Season the meat with dried fennel, Calabrian chili flakes, kosher salt, and pepper. Stirring occasionally, cook the seasoning mixed meat for 10 minutes or until the meat turns into golden brown color. Drain off the extra moisture from the frying pan. 

Step 5: Transfer the meat mixture in a bowl, and set aside. 

Bobby Flay Eggplant Bolognese Sauce Recipe Step by Step: 

Step 1: In a Dutch oven, heat the oil over medium high heat till shimmering. 

Step 2: Now add diced celery, diced fennel, chopped onion, eggplant, and diced carrots to sauté for 5 minutes or until tender. 

Step 3: Add the garlic paste into the vegetable mixture, and cook for 2 minutes or until fragrant. 

Step 4: Add the tomato paste, wine, dried fennel stirring in the vegetable mixture. Well, this time you need to reduce the heat, and cook for 3 minutes more.

Step 5: Mash the vegetable mixture with a wooden potato masher seasoning with salt, and pepper.  Cook the sauce until slightly thicken. (about 15 minutes). 

Step 6: Lastly add the meat mixture into the sauce, cooking for another 15 minutes. Sprinkle parsley and oregano before removing from heat. 

Preparing the Garlic Bread Step by Step: 

Step 1: Set the broiler for preheating. Placing the ciabatta in a baking sheet, heat under the broiler until it turns into a light golden color. 

Step 2: In a small bowl, add unsalted butter, garlic paste, salt, and pepper. Whisk all ingredients to combine finely. 

Step 3: Oodles the garlic sauce over the bread to broil until the color is golden brown and bubbly. 

Removing from heat, let cool for a few minutes before slicing. 

Serving: 

Step 1: Bring salted water to a boil, and add bobby flay pasta in the boiling water for 5 minutes or until al dente. 

Step 2: Drain off the water, reserving one cup of pasta water. 

Step 3: Now in a sauté pan, add 2 cups of Bolognese sauce over high heat. Gradually add the cooked pasta, creme fraiche with the reserved pasta water. 

Step 4: Toss the pasta adding Parmigiano-Reggiano. As topping, sprinkle the chopped parsley and serve.
