Me and my whole family become crazy when it comes to sausages. We never miss a little chance of enjoying sausage recipes. In this whole week sausage challenge in our community, I would like to share my sweet experiences and recipes with you. And you all already knew that nothing beats roger wood sausages. So, today my content is all about roger wood sausage recipes. 

I will provide 2 of my most favorite dishes that will surely blow your mind when you taste them. 100/100 on taste and look, they will always be your first choice to any meal. 

Red rice and sausage recipe: 

To me, this recipe sounds tasty, let alone have it. Well, because of its fine color on serving bowl caught my eyes first. Anyways, preparing this seems easy but there is a twist. The secret thing of this recipe, is its seasoning.

As I had decided to cook this at home, but couldn’t feel the taste any better. Like I have noticed, you all have been asking a lot about how to cook roger wood sausage or red rose sausage perfectly. So, here is the trick: their perfect seasoning. After researching a lot, I have decided the creole seasoning best for these type of dishes. Let’s check out the recipe. 

Ingredients we need:

  • 1 pound of red rose sausage 
  • 1 shallot, finely chopped (about 1 cup)
  • 1 small green bell pepper, finely chopped (about 1/3 cup) 
  • 1 tsp of creole seasoning 
  • 3 cups of tomato sauce or puree
  • 1 1/2 cups of water
  • 2 cups of medium-grain rice

Instructions for preparing step by step: 

Step 1: Take a large saucepan, and add 1 pound of red rose sausage over medium-high heat for 3-4 minutes. Remove from saucepan to a paper towel-lined shallow dish or plate.

Step 2: After that, add 1 cup of chopped shallot, and 1/3 cup of finely chopped bell peppers. Season with 1/2 tsp. creole seasoning. Saute the vegetables for about 8 minutes or until onions become translucent and fragrant.

Step 3: Now place the fried sausage back to thw saucepan with vegetables. 

Step 4: Add in 3 cups of tomato sauce, 1 ½ cup of water, other 1/2 tsp. of cerole seasoning and 2 cups of medium-grain rice. 

Step 5: Bring all the ingredients to a boil and then cover the saucepan with a lid, and reduce heat to low or simmer. 

Step 6: Heat the dish on low for 20 to 25 minutes.

Step 7: Lift the lid to stir and check to see whether medium-grain rice is cooked. If not, add a little more water, then cover and cook for 5 more minutes.

By this time the special Lowcountry red rice and sausage will be ready to enjoy. You will feel amazing with its fine reddish color on rice. 

Lumberjack sausage recipe:

 Lumberjack sausage is very popular we all know that. But do you guys know about their sausage, okra, and tomatoes recipe? The trio combination tastes so good that you will feel very attached to this recipe. 

My daughter asked me out to prepare this dish for every Sunday lunch. So, this is one of the favorite roger wood foods, and I would be so happy if you feel this recipe good. I’m giving the written recipe for almost 4 servings. This recipe is completely adjustable as per your serving amount. 

Ingredients we need:

  • 3 packets of Roger Wood Smoked Sausage, finely sliced (Spicy Hot Lumber Jack or the Original Lumber Jack) 
  • 3 cups of chopped okra
  • 2 cups of Roma tomatoes, finely sliced or chopped. If Roma tomatoes aren’t available, then you can also substitute the Roma tomatoes with grape tomatoes sliced lengthwise.
  • 1 cup of sweet onion, finely diced 
  • 3 cloves of minced garlic (about 1 1/2 tablespoon)
  • 1-2 tbsp of extra virgin olive oil
  • 1 tsp of Salt or to taste
  • ¼ tsp of freshly ground black pepper
  •  2-3 tsp of cayenne powder (optional)

Instructions for preparing step by step: 

Step 1: Heat a 9-inch cast-iron skillet or large frying pan over medium-low heat and add 2 tbsp of Extra Virgin Olive Oil.

Step 2: Add the finely sliced roger wood sausages in the cast-iron skillet, and spread them evenly. Stir often and allow to cook until slightly browned.  


Step 3: When the sausages turn golden brown in color, add 3 cups of chopped okra and fry them over medium heat for about 3-4 minutes stirring the sausages and okra occasionally.

Step 4: Add 1 cup of diced sweet onions and cook them for about 2 minutes, or until the onions begin to tender. 

Step 5: Then, pour 1 ½ tbsp of minced garlic and stir frequently for 30 minutes until slightly brown, and fragrant.

Step 6: Finally add 2cups of chopped roma tomatoes, and allow them to cook for 5 minutes, stirring occasionally. 

Step 7: Season the cooked sausage-okra-tomato dish with 1 tsp of salt, and ¼ tsp of ground pepper, 

Step 8: Finally, sprinkle 2 tsp of cayenne pepper if you choose. 

Serve immediately with white or brown rice, and enjoy hot and tasty sausage okra and tomatoes.

Conclusion: 

Feel the taste with the spicy sweetness of red rice sausage, and lumberjack sausage. Make sure you follow the instructions as written, to get a maximum taste.
