One Medium Sliced Onion

One Julienned Red Bell Pepper

Method of Preparing the Southwest Chipotle Sauce Step by Step:

Step 1: Combine yogurt, chopped green onion, chipotle peppers, peanut butter, and 1/4 teaspoon salt in a blender or food processor. Blend until completely smooth.

Refrigerate in a tightly sealed container for 2-3 hours. This way it will be ready and chilled to be served with the chicken subway.

Step 2: Preheat the oven to 350 degrees F. In a large mixing bowl, place the chicken. Sprinkle 1/2 teaspoon salt, pepper, chili powder, oregano, and cumin- on the chicken. Mix well so the chicken is well coated with the spices.

Step 3:  In a skillet over medium heat, heat half of the oil. Cook onions and red peppers until they are soft and tender.  transfer the ingredients to a platter. Put them aside.

Wrap the subway bread in aluminum foil and bake for 10 minutes. This will soften the bread and the soft bread will have some toasted crunchy flavor to it too.
