Guess what! Last week was one of the most special weeks. Finally, I have completed my Baja Fresh copycat journey. And yes! Today I’m here with amazing Baja fresh recipes that are so much mouth-watering, will definitely make you feel like to prepare and consume them right away. 

The saddest thing is, I haven’t completely figured out about the Baja fresh chili lime dressing recipe. So yeah, despite being my favorite, I can’t share the best recipe with you. Yet the rest of them is here.

Baja Fresh Salsa Recipe: 

I can bet, you have never tried the best salsa in town if you haven’t tried this one. The fresh texture of vegetables is really refreshing. Also, I personally loved the charred black color of it. Don’t mix it with roasted, they are actually charred with fire. Anyways, Let’s learn the recipe to enjoy them at home whenever you want.

Baja fresh Ingredients:

· 10 large tomatoes, about 4 lbs

· 2 jalapeños or to taste

· 1 lime

· 1/2 lemon

· 2 garlic cloves

· 2 cups of chicken stock or as needed to thin salsa, don’t make it thicken

· ¼ cup of olive oil

· ½ cup of fresh cilantro

· 1 tsp of Kosher salt or to taste

· 1/4 tsp of freshly ground black pepper or to taste

Methods of Preparing Step by Step:

Step 1:

First of all, you need to slice the tomatoes into halves and keep them aside in a clean bowl. 

Step 2:

Now put the slices upside down over a grill pan on high heat. Grill the tomatoes for 30 minutes at first. 

Step 3:

Now add jalapenos over the grilled tomatoes and keep grilling for another 30 minutes or continue grilling until they are very charred and blackened. 

Step 4:

Removing from grill pan, place the grilled tomatoes, jalapenos, garlic cloves, lemon and lime juice, ¼ cup of olive oil, ½ cup of fresh cilantro, 1 tsp of Kosher salt, ¼ tsp of black pepper, and 1 cup of chicken stock in a blender.

Blend them until the consistency is like a puree. If needed, add more chicken stock to make the salsa pourable and make it thin. 

Here your Baja fresh salsa is ready. With this amount, you can keep them enjoying up to 3 or 4 months or can throw a big fat party. 

Baja Fresh Tortilla Soup Recipe:

Another must-try item from Baja fresh is tortilla-chicken soup. This is so full of texture that you will never miss this at least weekend special dinner. Guajillo chiles, Anaheim chiles, make the texture more mouth-watering. Here is the written recipe.

Ingredients we Need:

  • 2 guajillo chiles seeded, stemmed, and torn into pieces
  • 1 cup of boiling water
  • 2 Roma tomatoes
  • 2 tomatillos husked and roughly chopped
  • 2 cloves of garlic, peeled
  • 1/2 large white onion, finely chopped, about 3/4 cup 
  • 1/4 cup of diced white onion for serving
  • 1 tbsp of vegetable oil or extra virgin olive oil
  • 1/2 small carrot, peeled and cut into matchsticks or small dices
  • 1/4 cup of Anaheim chile, seeded and diced
  • 1 1/2 lbs of bone-in chicken thighs boneless, skinless
  • 6 cups of chicken broth
  • 1 tsp of kosher salt
  • 2 cups of corn tortilla strips toasted, or tortilla chips, broken into bite-size pieces
  • 1/2 cup of Monterey Jack, shredded
  • 1/2 cup of Mozzarella cheese, shredded
  • 1/4 cup of avocado ripe, halved, pitted, peeled, and diced
  • 1/4 cup of cilantro leaves, chopped fresh
  • 4 Lime wedges

Directions:

Step 1:

Soak the chile pieces into the boiling water for 10 minutes or until completely soften. 

Step 2:

Cut the Roma tomatoes into quarters, scoop out the core along with seeds. Chop them finely and add them to the blender. 

Step 3:

Draining off the water, place chile, tomatillos, garlic cloves, diced onion into the blender, and blend them until puree. 

Step 4:

Heat the vegetable oil over high heat on the instant pot. Saute the remaining onion, carrot, chile for 2 minutes or until softened. 

Step 5:

Add chicken thighs, broth, and Kosher salt. Seems like a Baja fresh chicken recipe, right? Anyways, secure the lid and set the cooking timer for 20 minutes. 

Step 6:

When done, transfer the chicken thighs to two soup bowls. Pour the hot broth with tortilla strips, cheese, and diced onions. Garnish the avocado and cilantro, serving hot right away with lime wedges on it. 

And that’s it. Just follow the directions step by step to enjoy the amazing Mexican chicken soup at home anytime.

Baja Fresh Rice Recipe

The Mexican style best rice you will only find in Baja fresh. But what about the midnight cravings? You can just cook it at home within less than 30 minutes. Let’s see the recipe. 

Ingredients We Need: 

  • 3 tbsp of olive oil
  • 1 cup of long-grain uncooked rice
  • 1 tsp of garlic, minced 
  • ½ tsp of Kosher salt
  • ½ tsp of cumin
  • ½ cup of tomato sauce
  • 2 cups of chicken broth
  • 3 tbsp of fresh cilantro, finely chopped.

Directions: 

Step 1:

First of all, heat the vegetable oil in a large saucepan over medium-high heat. Place the washed rice, stirring nicely until the rice begins to grow some light brown color. 

Step 2:

Now add minced garlic, ½ tsp of kosher salt, ½ tsp of cumin, stirring off for 5 minutes or until fragrant. 

Step 3:

After that, pour the tomato sauce, chicken broth, turning the heat up to high. 

Step 4:

Bringing the mixture to a boil, switch the heat to low, and cover the saucepan with a lid. Keep it on simmer for 20 minutes.

When done, transfer to a serving bowl and serve hot with Baja fresh salads.
