Ingredients:

  • Extra-virgin olive oil about 2 tbsp.
  • Onion about 2
  • Kosher salt about 1 tsp.
  • Garlic clove about 1 
  • Crushed red pepper flakes about 1/2 tsp.
  • Ground pork about 1/2 pound
  • Ground beef about 1/2 pound. 
  • 1 large size egg
  • Bread crumbs about 1/2 cup 
  • Parmigiano, grated about 1/2 cup
  • 1/4 cup of water 
  • Mariana sauce 
  • Fresh parsley

Instructions: 

Step 1: Chop the onion evenly with a sharp knife. Then mince the garlic clove and set aside. Also, you need to chop the fresh parsley finely

Step 2: Take out a large frying pan and coat the pan entirely with extra virgin olive oil. Now, over medium-high heat, add the chopped onions into the frying pan, seasoning with salt and pepper. Cook the seasoned onion for 5 minutes so that the color of the onions gets transparent. By this time, the onion smells aromatic and tender enough to be cut down with the spatula. 

Step 3: In that frying pan, add minced garlic and 1/2 tsp of crushed red pepper flakes. Saute for another 2 minutes, stirring continuously. When the mixture is done cooking, remove from heat. I think this is the time framing, the aroma smells so perfect with just a few ingredients. Let the mixture cool and prepare the meat. 

Step 4: Well, this trick I have done, when I prepared these excellent meatballs for the second time. Put the ground beef and ground pork into a blender in order to mix them perfectly. Don’t use water at all. The motive is just to blend the ground meats perfectly to get the perfect taste. Place the blended meat into a large bowl and include the large egg, Parmigiano, 1/2 cup of breadcrumbs, and chopped parsley. Squish the mixture with your hands to get them blended perfectly. The more you squish, the more they will get easy to shape. 

Step 5: In that bowl, add onion mixture. Squishing more sprinkle kosher salt to taste. Lastly, add 1/4 cup of water and continue squishing the meat mixture until they look like a puree. 

Step 6: Now you need to set the oven for preheating to 350 degrees F. With hands, shape the meatballs as per your desired size. I love large meatballs, so I usually shape them in golf ball sizes. 

Step 7: Coat another frying pan with extra virgin olive oil to brown the meatballs. Put the frying pan over medium heat and place the meatballs in the pan, browning the oval surface equally. this process doesn’t take more than 2 minutes.

Step 8: In a cookie sheet place the meatballs. Place the cookie sheet into the preheated oven and bake for 15 minutes. When done, remove the meatballs from the oven and place them in the Mariana sauce. Serve with finely cooked spaghetti.

 Ingredients:

  • 2 cups of buttermilk
  • 1 teaspoon of smoked paprika 
  • 1/2 teaspoon of cayenne pepper 
  • 2 tsp of kosher salt 
  • 4 pounds of chicken, cut into 8 pieces 
  • 2 cups of all-purpose flour 
  • 1 teaspoon of baking soda 
  • Vegetable oil, for frying 

Instructions: 

Step 1: Take a large bowl and pour the buttermilk, cayenne pepper, smoked paprika, and kosher salt. Whisk all the ingredients well. 

Step 2: In the bowl, add chicken pieces, gently coat them with hands. Cover the bowl with a plastic wrap and allow the bowl to sit at room temperature for at least 30 minutes. But remember, if you marinate the chicken for longer, the chicken gets juicier and softer. Well, I usually marinate the chicken for 3 hours. 

Step 3: Now preheat the oven for this special fried chicken to 375 degrees F. 

Step 4: In a shallow pan, mix the flour, 1 teaspoon of baking soda, and salt. Add the marinated chicken into the flour mixture and coat them well. Then dip into the marinating soak and again to the flour mixture. 

Step 5: Grease the rimmed baking sheet with vegetable oil and place the chicken parts in it. Put the baking sheet in the oven for 15 minutes. To check whether the chicken is done or not, insert an instant-read meat thermometer that should be registered at 165 degrees F.
